0 to 4 Alarm Chili

English Version:

This makes a big pot of vegetarian chili that gets even better after sitting a few days in the fridge. It is excellent with the Corn Bread in the last issue of BA and a crisp green salad with avocado. I like to use the fresh red beans I find at Tiara Dewata. You can also use canned beans, or dried beans soaked over night and cooked until soft.

0 to 4 Alarm Chili

Serves 6

Ingredients :

- 2 Tbl. olive oil
- 1 yellow onion, chopped
- 5 cloves of garlic, pressed
- 1 carrot, finely chopped
- ¼ cup celery leaves, (seladri) finely chopped
- 1 roasted bell pepper, seeded and finely chopped
- 4 large red chilies (Lombok), roasted, skinned, seeded,and chopped Note: these are mild chilies
- 1 cup corn kernels
- 2 Tbl. Mexican chili powder
- 1 Tbl. ground cumin
- 1 Tbl. oregano
- 2 bay leaves
- 1 or more pinches of cayenne (omit if you want 0 alarm chili)
- 1½ cup beer
- ½ kg. fresh tomatoes, skinned and chopped in a food processor
- 1 Tbl. Worcestershire sauce
- 2 tsp. balsamic vinegar
- 5 cups cooked red beans
- 1 tsp. salt or to taste
- ground black pepper to taste
- 2 Tbl. corn meal or fine polenta
- a few dashes of Tabasco (optional)
- 6- 8 Tbl. Yogurt
- ¼ cup coriander leaf, chopped
- a few dashes of Tabasco
- ¼ tsp. salt
- black pepper to taste


Directions :

Heat the olive oil in a large pot, add the onion, garlic, carrot, celery, and bell pepper, and cook stirring until the vegetables start to brown. Next add the roasted and chopped Lombok chilies, corn, Mexican chili powder, cumin, oregano, bay leaves, a pinch of cayenne, beer, tomatoes, Worcestershire sauce, vinegar, beans, salt and pepper, and cook, simmering for 20 -30 minutes, uncovered. If you want the chili hotter add further pinches of cayenne.

Before serving, stir in the corn meal or polenta a little at a time until the chili is thick. Taste for spiciness and add a few dashes of Tabasco if it needs more kick. Remove the bay leaf.

Mix the yogurt and chopped coriander leaf. Season with Tabasco, salt, and pepper to taste. Put a dollop of this on each bowl of chili.

Note: You can buy Mexican Chili Powder and corn meal called “Maize Meal” at Dijon.

Indonesian Version:

Buncis Mexican Pedas
(atau tidak pedas)
Untuk 6 orang

Bahan bahan :

- 2 Tbl. minyak olive
- 1 bawang bombay, dipotong kecil
- 5 siung bawang putih, dihaluskan dengan cara ditekan dengan alat
press.
- 1 wortel , dipotong kecil sekali
- ¼ cangkir daun seladri, dipotong kecil sekali
- 1 paprika yang sudah dipanggang, buang kulit dan bijinya, dan potong kecil sekali

- 4 cabe Lombok merah, dipanggang, buang kulit dan bijinya dan potong kecil

- 1 cangkir biji jagung segar atau jagung kaleng
- 2 Tbl. bubuk cabe Mexican
- 1 Tbl. bubuk jinten
- 1 Tbl. oregano
- 2 daun bay
- 1 jari bubuk cabe kering
- 11/2 cangkir bir
- ½ kg. tomat segar, buang kulit dan haluskan dengan menggunakan
blender besar (food processor ) atau blender biasa
- 1 Tbl. saos Worcestershire
- 2 tsp. cuka balsamic
- 5 cangkir buncis merah, yang sudah masak (buncis kaleng atau
buncis kering),lebih enak gunakan buncis yang masih segar, bisa dibeli di Tiara Dewata)
- 1 tsp. garam
- merica secukupnya

- 2 Tbl. tepung jagung (bukan maizena) atau polenta halus
- berberapa tetes saos Tabasco

- 6- 8 Tbl. yogurt
- ¼ cup daun ketumbar, dipotong
- sedikit saos Tabasco
- ¼ tsp. garam
- merica secukupnya

Cara membuat :

Panaskan minyak olive dalam pot besar, kemudian tambahkan bawang bombay, bawang putih, wortel, seladri, dan paprika, aduk sampai berwarna kecoklatan. Kemudian tambahkan cabe lombok, jagung, bubuk cabe Mexican, jinten, oregano, daun bay, bubuk cabe kering, bir, tomat, saos Worcestershire, cuka balsamic, buncis merah, garam dan merica secukupnya. Masak selama 20 -30 menit, jangan ditutup. Merasa kalau belum cukup pedas, bisa tambah lagi bubuk cabe kering kalau anda mau.

Beberapa menit sebelum masakan matang, masukkan tepung jagung atau polenta sedikit demi sedikit, aduk sampai masakan menjadi kental. Keluarkan daun bay. Tambah beberapa tetes saos Tabasco kalau anda mau lebih pedas.

Campur yogurt dengan daun ketumbar. Tambah garam, merica dan Tabasco secukupnya. Taruh satu sendok campuran ini di atas tiap mangkok buncis. Kalau masih ada sisa, taruh di dalam mangkok lain dan taruh di atas meja.

Note: Bisa beli tepung jagung di Dijon. Disana namanya adalah “Maize Meal”. Bisa beli polenta dan bubuk cabe Mexican (Mexican Chili Powder) disana juga.
