While Wayan was on maternity leave we trained a new cook. One day the house was filled with the odor of vinegar. I peered into the pot Jero was stirring and asked, “What’s that?” “Rhubarb Crisp” she replied matter-of-factly. After a quick taste I knew we were in trouble. We were out of maple syrup so Jero had substituted Cider Vinegar! We started with a new batch of topping, substituting home made palm sugar syrup and all was well.
Rhubarb Crisp
Serves 4-6
Ingredients:
- 6 cups cleaned rhubarb cut into about 3 cm pieces
- 1 Tbl. grated ginger
- 1/2 cup palm sugar grated
- 1/4 cup fresh orange juice or water
For the topping:
- 8 Tbl. butter
- 1/2 cup maple syrup or palm syrup
- 1 cup oat flour or wheat flour
- 1 cup oats
- 1/2 cup chopped walnuts
- 1 tsp. ground cinnamon
- heavy cream or vanilla ice cream (optional)
Directions :
Heat the oven to 350 degrees F.
Put the rhubarb, ginger, sugar, juice in a bowl and mix well. Put this in to a buttered shallow ceramic oven dish.
Melt the butter in a pot and then add the syrup, flour, oats, walnuts and cinnamon and stir over a low heat. When the mixture has thickened a little bit put it on top of the rhubarb and spread it out in to an even layer. Bake in the oven for 40- 45 minutes.
This is delicious eaten warm with heavy cream poured over the crisp or with a scoop of vanilla ice cream. I like to put the cream in a pitcher so each diner can pour on what they like - which often necessitates refilling the pitcher!

Indonesian Verson:
Rhubarb Crisp
Untuk 4-6 orang
Bahan - Bahan :
- 6 cangkir rhubarb, cuci dan potong kira - kira 3 cm
- 1 Tbl. jahe diparut
- 1/2 cangkir gula bali, diparut
- 1/4 cangkir jus orange segar
Bahan - bahan (untuk bagian atasnya) :
- 8 Tbl. mentega
- 1/2 cangkir maple sirup atau sirup gula bali
- 1 cangkir tepung oat atau tepung terigu
- 1 cangkir oat
- 1/2 cangkir walnut, dipotong sedang
- 1 tsp. bubuk kayu manis
- heavy cream atau es krim vanila (variasi kalau ada)
Cara Membuat :
Panaskan oven pada 350 derajat F.
Didalam mangkok taruh rhubarb, jahe, gula dan orange. Kemudian di aduk sampai tercampur rata.
Setelah tercampur rata, taruh di dalam piring kaca yang segi empat atau yang bundar dari keramik dan sudah diolesi mentega.
Di dalam pot masukkan mentega kemudian dipanaskan sampai cair, setelah cair tambah sirup, tepung, oat, walnut dan bubuk kayu manis. Kemudian diaduk pelan-pelan, gunakan api sedang. Setelah campuran ini sedikit kental (menggumpal ), taruh di atas rhubarb sampai rata kemudian di oven sampai 40 - 45 menit.
Catatan :
Lebih enak dimakan dalam keadaan hangat dan diolesi dengan “heavy cream” di atasnya atau es krim vanila. Lebih bagus kalau “heavy cream” ditempatkan pada wadah tersendiri. Wadah yang biasa dipakai seperti gelas keramik kecil yang ujungnya lancip atau orang biasa sebut “pitcher”. Heavy cream ditaruh terpisah, tujuannya agar kue tetap renyah.
