Fish In Ginger Marinade

This dish is so delicious it is hard to believe it can be so easy to make. We often cook extra fish so it can be flaked and used the next day in various ways such as Thai Fish and Eggplant Salad, Salad Nicoise, or simply mixed with mayonnaise, lime juice, and chopped chives for sandwich filling.

Fish In Ginger Marinade
Serves 4
Ingredients:

- juice of two limes
- 1 Tbl. grated ginger
- 2 Tbl. sesame oil
- 3 Tbl. soy sauce
- 1 Tbl. mirin (Japanese sweet wine)
- 1 clove garlic, pressed

- 1 Tbl. oil (canola or olive)
- 4 fish steaks - my favorite is tenggiri for this recipe

- 1 lime quartered

Directions :

Make the marinade by mixing all the ingredients except the oil, fish, and quartered lime. Mix well and put into a plastic container with a lid that is large enough to hold the fish in one layer.

Add the fish steaks and turn so they are well coated. Close the container and put in the refrigerator for at least 2 hours - you can even leave it over night if the fish is really fresh. Every 30 minutes turn the steaks so the sauce penetrates it evenly.
When you are ready to cook the fish, remove them from the plastic container and put the marinade into a small pot. Boil this until it is a little bit thickened.

While this is boiling, heat a frying pan large enough to hold the fish in one layer. Add 1Tbl.oil and when hot add the fish and cover the pan. Cook about 3-5 minutes on one side, then turn and cook until done. Be careful not to overcook or it will be tough and dry. The steaks should be a golden brown.

Serve with the sauce poured over the fish or in a bowl on the side, with quartered limes to squeeze on as desired.

Indonesian Version


Ikan dengan Saos Jahe

Untuk 4 orang

Bahan - Bahan:

- 2 buah jeruk nipis, di jus
- 1 Tbl. jahe yang di parut
- 2 Tbl. minyak wijen
- 3 Tbl. kecap asin
- 1 Tbl. mirin (anggur manis dari jepang)
- 1 biji bawang putih di pres

- 1 Tbl. minyak (canola atau olive)
- 4 potong ikan ( ikan tenggiri enak dengan recep ini )

- 1 buah jeruk nipis diiris 4 kali


Cara Membuat :

A. Saos Jahe
Campur jus jeruk nipis, jahe, minyak wijen, kecap asin, mirin dan bawang putih. Aduk sampai rata. Masukkan dalam kotak plastik yang ada tutupnya.

B. Ikan
Masukkan ikan dalam kotak plastik yang ada saosnya. Bolak-balik ikan supaya saos meresap bagus kelingling ikan. Kemudian tutup rapat. Taruh dikulkas selama 2 jam (tiap 30 menit ikan dibalik supaya saos meresap ke dalam ikan).

Waktu mau masak ikannya , keluarkan ikannya dari kotak plastik. Taruh saos dalam pot dan rebus sampai sedikit kental.

Ambil teflon (atau wajan lain) yang hitam dalamnya. Olesi dengan 1 Tbl. minyak dan panaskan. Setelah panas, masukkan ikan, kemudian tutup. Masak kira-kira 3-5 menit, kemudian ikan dibalik untuk memasak sisi yang lain. Hati hati masak ikan tidak terlalu lama karena ikan akan kering. Warna harus coklat.

Bila siap dihidangkan, tambahkan saos di atasnya atau di dalam mangkok kecil dipinggirnya, dan taruh irisan jeruk nipis dipinggirnya juga.
