What is THAT smell, Victoria?!” It was driving me crazy on the road from Seminyak to Ubud. She had opened the container of marinated sardines just purchased from Bali Deli, and had me salivating. After a long day of errands, we sat down to a classic Salad Nicoise, substituting those sardines for the typical canned tuna. Adding a soft ripe cheese, fresh bread, a glass of chilled white wine, we had a feast to wash away the day’s Bali road tensions.
Salad Nicoise
Serves 3-4
Dressing Ingredients:
- 3 Tbl. olive oil
- 2 Tbl. red wine vinegar
- salt and pepper to taste
- 1 tsp. Dijon mustard
- 2 Tbl. parmesan cheese, grated
Salad Ingredients:
- 400 gr. small potatoes, scrubbed, skins left on
- 250 gr. green beans, string, top and tail removed, cut on diagonal, steamed until just tender, and cooled
- 1 red, yellow, or green bell pepper, roasted, skin and seeds removed, sliced
- 250 gm. tomatoes, cut into 8 wedges each
- 3 shallots, thinly sliced
- 4 pieces canned or bottled anchovies drained, and chopped
- 3 Tbl. capers, drained
- 6-8 kalamata olives or other black olives, pitted, and cut into slivers
- 4 sprigs of fresh basil leaves torn by hand
- 1/3 cup chopped parsley
- 1 6 oz. (170 gr.) can of tuna, drained and flaked, or cooked and flaked fresh fish, or 8 pieces marinated sardines cut in half so each diner gets 4 halves
- 8 rucola leaves, cleaned, and torn in big pieces
- 3 hard boiled eggs, cut into 4 wedges each
Directions:
For the Dressing –
Mix all the dressing ingredients until well mixed and set aside.
For the Salad -
Boil the potatoes until just tender. Cool them enough to remove the skins. Cut the potatoes into large pieces and put into a large bowl. Pour the dressing over the potatoes and gently mix. Let these sit at room temperature while you prepare the rest of the salad. (They can sit for hours like this.)
When you are ready to eat add the green beans, bell pepper, tomatoes, shallots, anchovies, capers, olives, basil, parsley, and tuna or sardines. Put the rucola on a serving plate, top with the salad, arrange the egg wedges on top, and add a few grindings of fresh black pepper. Serve.
Indonesian Version:
Selada Nicoise
Untuk 3-4 orang
Bahan Untuk Saos :
- 3 Tbl. minyak olive
- 2 Tbl. red wine vinegar
- garam dan merica secukupnya
- 1 tsp. mostar Dijon
- 2 Tbl. keju parmesan, diparut kecil sekali
Bahan Untuk Selada:
- 400 gr. kentang kecil, dicuci bersih, jangan dikupas kulit
- 250 gr. buncis hijau, hilangkan tali bagian atas dan bawah serta ekor. Potong miring dan kukus setengah matang
- 1 biji paprica merah, kuning, atau hijau, yang sudah dipanggang dan dipotong memanjang
- 250 gr. tomat, dipotong memanjang menjadi 8 bagian
- 3 biji bawang merah, dipotong tipis sekali
- 4 biji anchovy dari kaleng atau botol, hilangkan minyak dan potong kecil
- 3 Tbl. biji caper, disaring
- 6-8 biji olive kalamata (buah zaitun) yang hitam, bijinya dikeluarkan,tiap olive dipotong memanjang menjadi 4 bagian
- 4 batang basil (kemangi) segar, pakai daunnya saja, dan dipetik pakai tangan
- 1/3 cunkir daun parsley yang segar, dipotong
- 1 kaleng (170 gr.) ikan tuna, disaring dan disepih dengan garpu, atau ikan segar yang masak dan disepih, atau 8 biji asinan ikan sardine, potong setengah supaya tiap orang/pemakan mendapat bagian 4 biji.
- 4-5 batang rukola, dicuci bersih, dan dirobek bagi 2 dengan tangan
- 3 butir telur rebus, dikupas kulitnya, setiap telur diiris memanjang menjadi 4 bagian panjang
Cara Membuat :
A. Saos
Campur semua bahan di dalam mangkok. Aduk sampai semua tercampur rata. Sisihkan disamping mangkok.
B. Selada
Rebus kentang sampai masak. Dinginkan sampai bisa dikupas kulitnya. Setelah itu, potong kira-kira 2 cm. x 3 cm. Masukkan kentang yang masih sedikit panas dalam mangkok, tambahkan saos, campur sampai rata dan biarkan selama beberapa jam diluar kulkas. Sambil menunggu ini, kita bisa menyiapkan selada.
Saat mau makan, tambah buncis hijau, paprika, tomat, bawang merah, anchovy, caper, olive, basil, parsley dan ikan. Campur bagus tapi hati-hati jangan sampai kentang menjadi rusak. Di atas piring yang sudah disiapkan (piring makan) taruh rukola, tambahkan kentang di atasnnya, dan di atas kentang ditambah telur. Taburkan sedikit merica, supaya semua kelihatan bagus. Kemudian semuanya siap untuk dihidangkan.
