Granola

English Version:

Shanti Lodge, near the National Library in Bangkok, serves one of the best granolas we have found in Asia. We first had it 20 years ago and now when we are in Bangkok we take the Express Boat up river to the Tewet stop and make our way through a large wet market to Shanti for a bowl of this crunchy healthy mix topped with their homemade yogurt. This is our interpretation of their low fat high protein granola.

Granola
Makes 8 - 9 cups

Ingredients:

- 5 cups rolled oats
- 1/2 cup raw almonds
- 1/2 cup raw pumpkin seeds
- 1/2 cup raw sunflower seeds
- 2 Tbl. raw sesame seeds
- 1 cup raisins
- 10 dates pitted and chopped
- 1/2 cup palm sugar, finely grated
- 1/2 tsp. ground cinnamon


Directions:

Toast the oats in a wok or heavy frying pan (no oil needed) stirring constantly until browned. Set aside.

Toast the almonds stirring constantly until browned. Set aside.
Do this with the pumpkin, sunflower, and sesame seeds - toasting each separately and setting aside when browned, being careful not to burn them.

In a large bowl combine all the toasted ingredients: the oats, almonds, pumpkin, sunflower and sesame seeds mixing well. Then add the raisins, dates, palm sugar, and cinnamon to taste.

Store the Granola in an air tight container. It will keep for weeks if it lasts that long.

Serve with sliced fruit of your choice, yogurt, soy milk, skim or low fat cows milk. You can also add a tablespoon of protein powder to boost the protein content at this point. Stir it in thoroughly.

Note: Experiment with different kinds of dried fruit such as apricots, figs, prunes, and nuts such as walnuts, cashews, peanuts, or pecans.


Indonesian Version:

Granola
Untuk 8-9 cangkir

Bahan-bahan :

- 5 cangkir oats, yang sudah digiling menjadi pipih
- 1/2 cangkir kacang almond, mentah
- 1/2 cangkir biji pumpkin, yang mentah (warna hijau)
- 1/2 cangkir biji matahari, yang mentah
- 2 Tbl. biji wijen, yang mentah
- 1 cangkir raisin
- 10 biji kurma, keluar biji dan dipotong kecil
- 1/2 cangkir gula merah, diparut halus
- 1/2 tsp. bubuk kayu manis


Cara Membuat :

Panggang oat dalam wajan (seperti wok) sampai coklat, angkat, taruh disamping.

Kemudian panggang almond dalam wajan sampai coklat, angkat, taruh disamping.

Setelah itu panggang biji pumpkin dalam wajan sampai coklat, angkat, taruh disamping.

Panggang biji matahari dalam wajan sampai coklat, angkat, taruh disamping.

Kemudian yang terakhir panggang wijen dalam wajan sampai coklat, angkat, taruh disamping

Dalam mangkok besar, campur oat, almond, biji pumpkin, matahari, dan wijen yang sudah matang. Aduk bagus. Kemudian tambahkan raisin, kurma, gula merah dan bubuk kayu manis. Aduk sampai tercampur bagus. Kemudian dinginkan. Setelah dingin masukkan dalam toples.

Bisa dipakai untuk berberapa minggu asalkan tutup toples dengan erat sehingga udara tidak masuk kedalam toples.
