One holiday we had 15 people coming to dinner and I didn’t want to play bartender making individual drinks. I started working on a punch recipe several days before the event, adding ingredients, tasting, adding, tasting. This turned into an excellent drink that could be served warm or cold as the weather dictated and with or without brandy or vodka as the guest wished. The day of the party the Bali monsoon was in full force, raining cats, dogs, and Indonesian lorries, so we warmed the punch and the tummies of our guests. This recipe can easily be doubled or tripled.
Serves 6
Ingredients:
- 1 liter apple juice or cider - use 100% juice without added sugar
- 7 pieces cinnamon stick, about 7 cm long
- 2 star anise seeds
- 4 cardamom seeds, crushed
- 3 navel or Valencia oranges, juiced
- 1 lemon, juiced
- 750 ml. cranberry juice
- 1 lemon sliced, optional
- I orange sliced, optional
- brandy or vodka
Directions:
Simmer the apple juice, cinnamon sticks, star anise and cardamom seeds in a covered pot until the aroma and taste are delicious. Cool and remove the spices. This can be done two or three days before your event. Store in a bottle in the fridge until ready to use.
When you are ready to serve, combine the spiced apple juice with the orange, lemon, and cranberry juices. Taste and adjust. If you want it sweeter add less cranberry juice.
To serve chilled: Mix the juices in a punch bowl and float the orange and lemon slices on top. Spoon into individual glasses with ice and a shot of brandy or vodka if desired, and stir.
To serve warmed: Heat the juice combination just until hot but not boiling. Spoon into a mug with or without a shot of brandy or vodka, stir and enjoy.

Holiday Punch
Untuk 6 orang
Bahan-bahan :
- 1 liter jus apel - gunakan 100% jus tanpa gula
- 7 buah batang kayu manis ( panjang 7 cm)
- 2 biji star anise
- 4 biji cardamom, diremukkan
- 1 jeruk lemon, di iris
- I jeruk Sunkis, di iris
- brandy atau vodka
Cara membuat :
Masuk jus apel, batang kayu manis, biji star anise, dan biji cardamon dalam pot. Di tutup. Rebus sampai tercium bau harum, kira-kira 15 menit. Masak dengan api kecil. Kemudian dinginkan dan saring.
Masukkan jus saringan ini dalam botol dan simpan dalam kulkas. Bisa simpan selama 2-3 hari sebelum digunakan.
Ketika siap digunakan, campur jus apel dengan jus jeruk sunkis, jus lemon dan jus cranberry. Merasa - kalau anda mau minuman lebih manis, kurangi jus cranberry. Kalau anda mau lebih asam, tambakan jus cranberry lagi.
Untuk hidangan dingin : Taruh dalam mangkok bagus dan cukup besar. Kalau ada "punch bowl" pakai ini. Taruh irisan jeruk dan lemon diatasnya. Isi gelas dengan jus dari "punch bowl" dan tambahkan berberapa es batu. Kalau tamu mau, bisa tambahkan satu seloki brandy atau vodka dan aduk.
Untuk hidangan hangat : panaskan campuran jus sampai hangat (jangan sampai mendidih). Masukkan dalam cangkir dengan atau tanpa brandy atau vodka, aduk.
