Secrets from the Deep..............Freeze

There are secrets lurking in my freezer - secrets that make cooking easier and more delicious. There is always a full flavored vegetable stock, three colors of roasted bell peppers, and lemon or lime ice cubes. These icy gems come compliments of my grandmother who lived in a hot dusty central California town. Grandma quenched our thirst with fresh steeped tea poured over lemon ice cubes. Friends know they are always in the tray in the freezer and help themselves when they come for a visit. But the deepest darkest secret lurking in my freezer is not something easily come by. Shhhhhhhh....chipotle chilies in adobo sauce. These smoky chilies add a surprising flavor to many dishes. Now the difficulty is how to get them and the only way I have been able to do that is having Mexican or American friends bring me a can - which lasts a year, once opened, in the freezer.

Lemon or Lime Ice Cubes


Ingredients:

- about 1 kg limes or lemon
- 1 ice cube tray

Directions:

Juice and strain enough limes or lemons to fill an ice cube tray. Pour into the tray and freeze.

When frozen tap out in to a freezer container or zip lock bag.

These are very intense so for one glass of cold tea or water put in several regular ice cubes and one lemon ice cube and fill with the beverage.

Also excellent in Gin Tonic or use your imagination........................

Roasted Bell Peppers

Wash and dry as many peppers as you like, preferably a mix of yellow, red, and green, and roast them set on a wire rack over one of your stove’s burners. Roast them until the skin is black. Set aside until cool enough to handle and scrape off the blackened skin. Cut in half and discard the seeds, ribs, and stem. Cut each pepper into pepper length strips 2-3 cm wide.

Now put these in a single layer on a cookie sheet or flat dish that fits into the freezer and freeze until hard. Store the frozen pieces in a zip lock bag and use when ever a recipe calls for bell peppers. The dish will be more delicious than using raw bell peppers.

Indonesian Version:

Rahasia Dari Dalam.........................Freezer Es Batu Jeruk Nipis Bahan-bahan : - kira-kira 1kg. jeruk nipis atau lemon- 1 cetakan es yang dari plastik untuk membuat es batu Cara membuat :
Jeruk nipis diperas sampai keluar airnya. Kemudian disaring dan bijinya dibuang. Setelah itu tuangkan kedalam cetakan es dan masukkan kedalam kulkas “freezer”.

Setelah menjadi es batu, keluarkan dari cetakan dan simpan dalam kotak plastik. Setelah itu simpan lagi dalam freezer.

Satu biji “es batu jeruk nipis” ini rasanya asam sekali, jadi hanya dipakai satu biji untuk satu gelas teh (gelas yang agak besar). Bisa disajikan dengan air biasa atau kalau mau lebih dingin bisa digunakan air dingin atau kalau mau lebih dingin lagi bisa ditambah beberapa es batu biasa.

Es batu jeruk ini juga enak kalau diminum dengan “Gin Tonic” atau anda bisa memakai minuman yang lain sesuai dengan selera. ..........................

Paprika Panggang

Siapkan paprika sebanyak yang anda suka, lebih bagus dengan warna yang bervariasi, kuning, merah dan hijau. Cuci dan keringkan. Taruh pemangganan di atas kompor, taruh paprika di atasnya dengan api sedang. Panggang sampai seluruh kulitnya berwarna hitam dan kemudian dinginkan.

Setelah dingin buang kulitnya dan potong memanjang jadi 2 bagian. Buang semua isi paprika termasuk bijinya.

Setelah bersih, potong memanjang dengan lebar 2-3 cm. Taruh dalam piring metal sejajar (jangan ditumpuk) dan simpan dalam kulkas “freezer”. Waktu sudah menjadi keras, keluarkan dan simpan dalam tas zip (kotak plastik) di dalam freezer.
