When I read that Mandarin oranges suspended over but not in vodka would turn the liquid amber and infuse it with the essence of orange, I had to try it. The jar sat in a darkened spot for ten weeks while I was in the States. It was a magic moment when I opened the cabinet and found the clear vodka transformed to a lovely amber color with a strong aroma of orange. The recipe follows as does an easy Limoncello which you can enjoy while waiting for the oranges to do their magic. Sip either of these at the end of a meal or try a combination of the two mixed together.
Liquore Mandarino
Ingredients:
- 3 to 4 mandarin oranges
- 4 cups of vodka
- 3 cups of sugar
- 3 cups of water
- Cheese cloth or netting
Directions:
Bundle 3 or 4 mandarin oranges in cheese cloth or netting. Tie with string and leave the ends long enough to tie around the jar. Suspend the orange package over 4 cups of vodka, making sure the oranges do not touch the alcohol. Wrap the string around the jar and secure. If you use a rubber ringed jar, it will close tightly on the string keeping it in place. Leave the jar in a darkened place for 1-3 months.
After this waiting period, boil 3 cups of water with 3 cups of sugar for 5 min. Cool for 2 hours.
Carefully remove the cheese cloth and orange package from the jar and add the cooled sugar syrup. Let stand 3 hours and then filter into a bottle. Wait one week to drink.
You can also warm the liquore with steam from an espresso machine and serve with a twist of orange. It is also excellent added to coffee.
Limoncello
Ingredients:
- 4 lemons with thick skin
- 3 cups vodka
- 2 cups of water
- 1 cup sugar
Directions:
Take the thin yellow rind from the lemons making sure to get only the yellow rind avoiding the white pithy bitter part.
Put these in a wide mouth jar with 2 cups of vodka and let sit for at least 72 hours in a darkened place.
Then boil 2 cups of water with 1 cup of sugar until the sugar is dissolved. Let this cool for 2 hours.
Add the sugar syrup to the jar and mix well. Add the remaining cup of vodka. Let this sit in the dark for 36 hours.
Remove the lemon peels and filter the liquor with a coffee filter into a clean bottle. Let this sit one week before serving.
