Minestrone

English Verson:

This soup reminds me of Italy. You can make a big pot and keep it in the fridge for days. The flavor just seems to improve. It can also be frozen in smaller portions. The secret to most soups is having a good stock. Check the BA web site for the stock recipe in the January 30th. issue. Served with a green salad and warm bread it is perfect on a cool August evening. This is comfort food - it warms your heart and your belly.


Minestrone
Serves 6-10

Ingredients:

- 2 Tbl. olive oil
- 1 yellow onion, chopped
- 4 cloves garlic, pressed

- ¼ cup parsley, chopped
- ¼ cup basil, chopped - not too small
- 1 cup spinach, pak choy, or greens, chopped
- 1 cup string beans, cut into bite sized lengths
- 2 carrots, chopped small
- 2 potatoes, chopped
- 2 cups cooked beans such as garbonzo or kidney
- 6 cups soup stock
- ¼ cup white wine
- 5 tomatoes or 1 can tomatoes
- 6 cups water
- salt and pepper to taste
- 2 zucchini, chopped
- ½ to 3/4 cup parmesan cheese, grated

Directions:

Heat the oil in a pot. When hot add the onion and garlic and cook stirring for 7 minutes. Next add the parsley, basil, greens, string beans, carrots, potatoes, and cook for 5 minutes.

Now add the cooked beans, soup stock, wine, tomatoes, water, salt and pepper. Simmer the soup, covered, over a low flame for 1½ hours.

From time to time check the soup and give it a stir. About 10 minutes before it is done add the zucchini and stir again.

Grate the parmesan on the course holes of a grater and put into a serving bowl so that each diner can garnish his soup with the cheese.


Indonesian Version:

Sup Minestrone

Untuk 6-10 orang

Bahan - Bahan :

- 2 Tbl. minyak olive
- 1 siung bawang besar, dipotong kotak
- 4 siung bawang putih, di press

- ¼ cangkir daun parsely, dipotong
- ¼ cangkir daun besil, dipotong
- 1 cangkir pak choy atau bayam atau sayur hijau, dipotong
- 1 cangkir buncis hijau, dipotong
- 2 buah wortel, potong kecil
- 2 kentang, potong kotak

- 2 cangkir buncis sudah masak seperti yang merah atau garbanzo
- 6 cangkir sup stock
- ¼ cangkir anggur putih
- 5 buah tomat atau 1 tomat kalengan
- 6 cangkir air
- garam dan merica sucukupnya

- 2 biji sukini, dipotong kotak
- ½ - ¾ cangkir keju parmesan, diparut besar

Cara Membuat:

Panaskan minyak. Setelah panas, masukkan bawang besar dan bawang putih, masak selama 7 menit.

Setelah itu, tambah daun parsely, daun besil, pakchoy, wortel, kentang dan buncis hijau. Masak selama 5 menit.

Kemudian tambah buncis, sup stock, anggur putih, tomat, air, garam dan merica secukupnya. Tutup pot, kecilkan api dan rebus selama 1 ½ jam. Sekali-sekali harus periksa sup sudah matang atau belum. 10 menit sebelum matang, masukkan sukini.

Sementara menunggu sup matang, parut keju dan simpan dalam mangkok.

Untuk menghidangkan di atas meja, pisahkan soup dan keju dalam mangkok yang berbeda.
