I love this dish! It is full of protein and at the same time
magically delicious. A double boiler is a must so the sauce
is heated just enough not to curdle the yogurt or lose the
living culture that is so beneficial. For directions on making
your own double boiler, see the note at end of the recipe.
Mushroom Stroganoff
Serves 4 -5
Ingredients:
A. Sauce
- 1 Tbl. olive oil
- 1 yellow onion thinly sliced
- 1⁄4 kg. fresh mushrooms, cleaned and sliced
- 4 dried or fresh black mushrooms, cleaned and sliced if
using dried mushrooms soak in warm water for 30 minutes, drain,
discard the stem and thinly slice the caps
- 1 Tbl. cornstarch
- 2 cups yogurt
- 1 250 gm package soft tofu
- 2 Tbl. soy sauce
- 2 Tbl. sherry or Chinese wine (“Soas Tape Siau Hing”
found in most supermarkets)
- 1 tsp. mustard powder
- 1 1⁄2 tsp. dill
- 1/8 tsp. paprika powder
B. 1 package (250 gm) pasta, fettuccini, egg noodles, or pasta
of your choice.
Directions for the Sauce:
Prepare a double boiler - see the note below. Bring the water
in the double boiler to a boil. Turn down the heat until it
is barely boiling.
Meanwhile heat the oil in a frying pan. When hot add the onions
and sauté until they are soft. Add the mushrooms and
cook until soft and the liquid has evaporated. Turn off the
heat and set aside.
Into a blender put the cornstarch, yogurt, tofu, soy sauce,
Chinese sherry, and mustard powder, and blend until smooth.
Put this into the top of the double boiler, stirring until
it has thickened, about 15 minutes. When it is thick add the
sautéed mushrooms and onion mixture and stir carefully
for about 5 minutes. Add the dill and paprika powder and stir
again.
Keep the sauce warm in the double boiler until ready to serve.
B. Pasta
Cook the pasta according to the package directions, adding
a little bit of olive oil to the water before adding the pasta.
Drain.
Serve the pasta with the sauce on top. Sprinkle some paprika
on top for color.
Note: To make a double boiler - find a metal or oven glass
bowl that just fits inside of a pot making sure it can not
fall into the pot. Put about 5 centimeters of water into the
pot or so it is just below the bowl. The ingredients go into
the bowl and are heated by the boiling water below.
Note: The sauce can be prepared a day ahead and kept in the
top of the double boiler in the fridge. Just heat it over
boiling water until it is hot when you are ready to eat.
Indonesian Version:
Spageti dengan Saos Jamur Stroganoff
Untuk 4 orang
Bahan - Bahan :
A. Saos Jamur Stroganoff
- 1 Tbl. minyak olive
- 1 bawang bombai, diiris tipis
- 1⁄4 kg jamur segar, diiris
- 4 biji jamur hitam segar atau jamur kering (kalau menggunakan
jamur kering, direndam dulu dengan air hangat selama 30 menit,
saring, buang cabangnya, setelah itu diiris)
- 1 Tbl. tepung maezena
- 2 cangkir yogurt
- 1 paket 250 gm tahu lemas (jepun)
- 2 Tbl. kecap asin (soy saoce)
- 2 Tbl. saos tape siau hing atau Sherry wine
- 1 tsp. bubuk mustard
- 1 1⁄2 tsp. daun dill
- 1/8 tsp. bubuk paprica
B. 1 paket (250 grams) mie Italian, fettucini atau mie telur,
yang datar paling bagus
Cara Membuat Saos:
A. Siapkan "double boiler" (lihat pasanan di bawa).
Rebus air di "double boiler". Waktu sudah rebus
kecilkan api sepaya air rebus pelan pelan.
Panaskan minyak di wajan. Setelah panas, masukkan bawang bombai
dan digoreng sampai lemas. Kemudian masukkan jamur segar dan
jamur hitam, masak sampai lemas dan cairan di wajan menguap
(habis ). Matikan api.
Dalam blender masukkan tepung maezena, yogurt, sherry/saos
tape siau hing, tahu,, kecap asin, dan bubuk mustard. Kemudian
diblenderkan sampai menjadi tercampur bagus. Setelah itu,
taruh isi blender di dalam mangkok. Kemudian di "double
boiler" kira-kira 15 menit sampai kental. Lihat pesan
”Double Boiller” di bagian “Teknik”.
Pada saat memasak, saos terus diaduk. Setelah itu tambahkan
campuran bawang bombay dan jamur, diaduk pelan-pelan kira-kira
5 menit. Kemudian tambahkan daun dill dan bubuk paprika.
Simpan saos di double boiler sampai siap makan. (Bisa taruh
di kulkas satu malam dan panaskan dengan cara di double boiler
waktu mau makan.)
B. Mie, panaskan air dalam panci secukupnya, tambahkan sedikit
minyak, biarkan air sampai mendidih. Kemudian masukkan mie
, masak kira-kira 8-10 menit (periksa instruksi di bunkus
dulu). Kemudian tiriskan airnya dengan menggunakan saringan.
C. Siapkan piring yang bagus, taruh mie di atas dengan saos
jamur atas mie. Bisa dibubuhi dengan bubuk paprika supaya
lebih enak.
Cara “Double Boiler”: masukkan saos dalam mangkok
metal atau keramic. Kemudian taruh diatas pot yang berisi
air. Ukuran mangkok harus sama atau lebih besar sedikit dengan
garis tengah pot. Saat air di pot mendidih, uap airnya akan
memanaskan mangkok metal.
