This is an unusual combination of ingredients, surprisingly festive and delicious. I served it recently at a dinner party. The guests looked at it suspiciously and fell silent - oranges and carrots, ho hum - and then the “ohhs” and “ahhhs” began and the questions, “What IS this?”. The bite of arugula, mixed the sweetness of the dressing and oranges, the salty olives, and the crunch of toasted nuts makes a party in the mouth!
Moroccan Orange Salad
Serves 4-6
Ingredients :
- 2 oranges
- 150 gr. carrots
- 8-10 green olives, pitted and cut into quarters or halves
- 50 grams arugula (rucola)
- 2 Tbl. roasted pine nuts
Dressing :
- 2 Tbl. lemon juice
- 5-6 Tbl. orange juice
- 1 Tbl. honey
- 1 tsp. powdered cinnamon
Directions :
Peel the oranges with a knife, cutting away all the skin and white pith. Do this over a bowl to catch the juice. Slice the oranges into thin rounds. Store in the refrigerator until ready to use.
Wash and peel the carrots. Using a vegetable peeler make long wide thin strips out of both carrots. Store in the refrigerator until ready to use.
Wash and dry the arugula and break into pieces. Keep in a plastic bag in the refrigerator until ready to use.
Put all the of the dressing ingredients in a jar with a tight fitting lid. Shake until well mixed. Store in the refrigerator until ready to use.
Just before you are ready to eat, divide the arugula between the diner’s plates. On top of the arugula evenly divide the orange slices. On top of this arrange the carrot strips and the olives. Sprinkle on 2 tablespoons or so of the dressing over each individual salad and garnish with pine nuts and a sprinkling of cinnamon. Buon appetito!
Indonesian Version:
Moroccan Orange Salad
Untuk 4-6 orang
Bahan-bahan :
- 2 jeruk (sunkist)
- 150 gr. wortel
- 8-10 buah olip, buang bijinya dan dipotong menjadi 4 bagian,
- 50 gr arugula (rucola)
- 2 Tbl. pine nut, dipanggang
Saos :
- 2 Tbl. jus lemon
- 5-6 Tbl. jus orange
- 1 Tbl. madu
- 1 tsp. bubuk kayu manis
Cara Membuat :
Kupas jeruk sampai yang putih tidak kelihatan. Iris bundar dan tipis. Kemudian simpan di kulkas.
Cuci wortel, kupas kulitnya, parut memanjang, tipis, dan lebar. Simpan di kulkas.
Cuci arugula sampai bersih dan keringkan. Kemudian dipetik-petik (pisahkan daun dari batang), masukkan dalam tas plastik ziploc dan simpan di kulkas.
Setelah semua siap, bikin saos. Untuk membuat saos, campur semua bahan saos, aduk sampai semua tercampur bagus. Simpan di kulkas.
Beberapa menit sebelum makan, taruh arugula di atas tiap piring, diatasnya tambah orange, di atasnya tambah wortel, olip, dan kemudian di atasnya tambahkan dressing. Setelah itu bubuhi dengan bubuk kayu manis dan pine nuts yang sudah dipanggang.
