Cheese Cottage Pancakes

English Version:

I tend to shy away from pancakes because they are often heavy and carb laden. These feather light beauties are tender and in high protein. Serve them hot off the griddle with your favorite jam, honey, or syrup.

Cheese Cottage Pancakes

Serves 4

Ingredients :

- 6 eggs, separated
- 1/16 tsp. cream of tarter
- 1/2 packet soft tofu, 125 gr. (tahu Jepun)
- 2 Tbl. yogurt
- 2 cups cottage cheese (preferably low fat)
- 2/3 cup oat flour or wheat flour, or a combination
- 2 Tbl. brown sugar
- 1/2 tsp. salt
- A pinch of cinnamon

Directions :

Beat the egg whites with the cream of tarter in a very clean bowl until they are stiff.

Put the tofu and yogurt into a blender and blend until well mixed.

In another bowl mix the egg yolks, cottage cheese, flour, sugar, salt and cinnamon with a mixer or whisk. When this is well mixed add the ingredients from blender into this bowl and gently mix. Then fold in the egg whites being careful not to over mix.

Heat a large Teflon frying pan with a little butter or oil. When hot spoon the batter into the pan to make 3 or 4 pancakes (about 7 cm in diameter) at a time and cook until browned. Remove these to a plate to keep warm (or serve immediately to hungry diners) and cook the next batch until all the batter is finished.


Indonesian Version:


Pancake Cheese Cottage


Untuk 4 orang

Bahan-bahan :

- 6 butir telur
- 1/16 tsp. cream of tartar

- 2 Tbl. yoghurt
- 1/2 paket tofu jepun

- 2 cangkir cottage cheese (yang kurang gamuk)
- 2/3 cangkir tepung oats atau tepung terigu, atau campur ke duanya
- 2 Tbl. gula coklat atau gula bali
- 1/2 tsp. garam
- 1 jari bubuk kayu manis


Cara Membuat :

Kocok putih telur dengan “mixer” kemudian tambahkan cream of tartar. Kocok sampai mengembang dan kaku. Pakai mangkok yang bersih sekali. (Kalau mangkok kurang bersih, misalnya masih ada sisa minyak, putih telur tidak akan bisa kaku).

Yoghurt dan 1/2 paket tofu jepun diblender sampai halus.

Campur kuning telur, cottage cheese, tepung, gula, garam, kayu manis di dalam mangkok lain, kocok dengan “mixer” sampai rata. Setelah selesai masukkan bahan dari blender ke mangkok ini dan aduk pelan-pelan. Kemudian masukkan putih telur dan aduk pelan-pelan sampai rata. Adonan selesai.

Siapkan wajan teflon yang besar, dan masukkan sedikit mentega atau minyak. Setelah panas masukkan 1 sendok adonan sampai ada 3 atau 4 pancake di dalam (tiap pancake 7 cm). Masak sampai pinggirnya berwarna kecoklatan. Lebih enak kalau dimakan dalam keadaan panas.
