Savory Tomato Sauce

English Version:

This is a versatile and delicious tomato sauce. Use it on pasta, over potato tempe patties (see the next issue of BA), on top of polenta, or anywhere a tomato sauce is needed. I have a difficult time not just eating it from the serving bowl! You can double the recipe and freeze part of it for later use.

Savory Tomato Sauce
Makes 3-4 cups

Ingredients :

- 1 Tbl. olive oil
- 1 white or yellow onion, diced
- 3 shallots, finely chopped
- 5 cloves garlic, thinly sliced
- 2 Tbl. balsamic vinegar
- 5 tsp. tomato paste
- 1 tsp. palm sugar, grated
- 3 Tbl. finely chopped mix of basil, parsley, oregano
- 700 gr. tomatoes, skinned and chopped
- 1 Tbl. capers
- 1/4 tsp. cayenne or dried red chili powder
- 1 tsp. salt
- pepper to taste

Directions :

Heat the oil in a pot. Add the chopped onion stirring and cooking until there is a nice fragrance. Add the shallots and garlic and stir, cooking until the mixture is light brown in color.

Now add the balsamic vinegar, tomato paste, palm sugar, basil, parsley, oregano, tomatoes, capers, cayenne, salt, and pepper. Stir to mix well and cook for 15-20 minutes.

Check the seasonings, adding more balsamic vinegar, salt, pepper or cayenne as desired. If it is too thick add a little hot water so it is saucy.

Indonesian Version:

Saos Tomat Enak

Buat 3-4 cangkir


Bahan-bahan :

- 1 Tbl. minyak olive
- 1 bawang bombay, dipotong kecil
- 3 bawang merah, dipotong kecil
- 5 bawang putih, diiris tipis
- 2 Tbl. balsamic
- 5 tsp. pasta tomat (dari kaleng)
- 1 tsp. gula bali, diparut
- 3 Tbl. daun besil, parsely dan oregano, dipotong kecil
- 700 gr. tomat, buang kulit dan bijinya, dipotong kecil
- 1 Tbl. biji caper
- ¼ bubuk cabe kering
- 1 tsp garam
- merica secukupnya


Cara Membuat :

Panaskan minyak, masukkan bawang bombay dan masak sampai ada bau harum. Kemudian tambahkan bawang merah dan bawang putih, aduk sampai berwarna sedikit kecoklatan. Setelah itu masukkan balsamic, pasta tomat, gula bali, daun besil, parsely, oregano, tomat, caper, bubuk cabe kering, garam dan merica. Masak 15 -20 menit. Kalau terlalu kental tambah sedikit air panas supaya seperti saos.
