Fiesta Snapper

As colorful as a Mexican Fiesta, this is a good dish to serve to guests. It always gets rave reviews. Since it is quite saucy serve it with rice or noodles to soak up the juices. Add a mixed green salad with avocado and, aqui esta!, you have an impressive but easy meal. The perfect dessert in keeping with the Mexican theme would be an almond flan - another recipe to look for in a future issue of the Bali Advertiser.


Fiesta Snapper

Serves 6

Ingredients:

- 1 Tbl. olive oil
- 6 gloves of garlic, pressed
- 2 large onions, chopped
- 2 carrots, cut into matchsticks

- 1/2 cup white wine or vegetable stock
- 3 1/2 cups tomatoes, skinned and chopped, fresh or canned
- 1/4 cup capers
- 30 green olives, with or without pimento, pitted and cut in half
- 2 chilies, seeded and minced
- 2 tsp. dried or fresh oregano
- salt and pepper to taste
- 4 snapper filets
- 1 Tbl. coriander leaf, chopped
- 2 limes, cut into wedges

Directions:

Make the sauce - heat the oil in a large frying pan and when hot add the garlic, onion, and carrots. Cook for 5 minutes and then add the wine, tomatoes, capers, olives, chilies, oregano, salt and pepper. Cook for 10 minutes.

Now rinse the fish under running water and pat dry on paper towels. Cut each fillet in half cross wise. Don’t cut the fish in small pieces.

Put the fish in a single layer into a glass or ceramic baking dish and cover with the sauce.

Bake uncovered in a 350 degree F oven for 10 - 15 minutes. Be careful not to over cook. Sprinkle with the chopped coriander leaf just before serving.

Serve lime wedges on the side.

Indonesian Version:

Ikan Kakap Fiesta

Untuk 6 orang


Bahan - Bahan :

- 1 Tbl. minyak olive
- 6 biji bawang putih, di pres
- 2 biji bawang bombay, dipotong biasa
- 2 buah wortel, dipotong memanjang seperti korek

- 1/2 cangkir anggur putih (white wine) atau stok
- 3 1/2 cangkir tomat segar, atau dari kaleng, kupas kulitnya dan
dipotong
- 1/4 cangkir caper
- 30 biji olive hijau tanpa biji, potong menjadi 2 bagian
- 2 biji cabe kecil, buang bijinya dan dipotong halus
- 2 tsp. oregano, yang segar atau kering
- garam dan merica secukupnya.

- 2 ikan kakap, buang tulang dan kulit, satu ikan dibelah memanjang
menjadi dua bagian (iris dari ekor ke kepala)
- 1 Tbl. daun ketumbar, di potong
- 2 biji jeruk nipis, di potong menjadi delapan bagian


Cara Membuat :

Saosnya : panaskan minyak, setelah panas masukkan bawang putih, bawang bombay dan wortel. Masak selama 5 menit kemudian tambahkan white wine/anggur putih atau stok, tomat, caper, olive, cabe, oregano, garam dan merica. Masak selama 10 menit.

Untuk ikan, bersihkan ikan dan keringkan dengan kain atau kertas dapur. Kemudian potong tiap potangan ikan menjadi 2 bagian (potongan ikan jangan terlalu kecil). Taruh ikan di piring gelas atau keramic dan olesi dengan saos sampai rata pada kedua sisinya.

Setelah rata, masukkan dalam oven dengan suhu 350 derajat F. Oven selama 10-15 menit. Hati-hati jangan dioven terlalu lama.

Bubuhi dengan daun ketumbar sebelum makan

Taruh jeruk nipis di atas piring kecil dan taruh di atas meja di sebelah ikan.

Note: Lebih enak dimakan dalam keadaan panas.
