This is part two of “Secrets of the Deep...............Freeze”. See the BA web site for Part one if you missed the last issue. Having a well flavored soup stock at hand makes cooking easier and more delicious and it is very easy to make.
Soup Stock
Ingredients :
- 1 yellow onion, skinned and cut in half
- 2 leeks, carefully washed
- 2 carrots, and cut in half
- 8 - 10 branches of celery leaf (saladri in Bahasa Indo),
- 2 tomatoes,
- 1 head of garlic, skins removed
- 2 kg. mixed vegetables, washed (such as green
beans, broccoli, greens, cabbage, zucchini - try different
combinations)
- 2 Tbl. tomato paste
- 2 bay leaves
- 3 Tbl. parsley, chopped
- 10 black pepper corns
- 1/2 cup fresh basil leaves
- 5 liter fresh water
- salt to taste
Directions :
Put all ingredients into a large soup pot with the water. Bring to a boil and simmer for about one hour until every thing is soft.
Cool the soup. Strain into a clean bowl mashing the veggies down in the strainer to extract all the flavor. Throw away the mashed vegetables.
Pour the stock into plastic freezer containers with about 2 cups to a container. Fill one ice cube tray with stock. Put all in the freezer and freeze until hard. The cubes can be tapped out and put into a zip lock bag for times you only need a tablespoon or so at a time.
Take a can or bottle of chipotles in adobo sauce and put the entire contents in a blender. Blend until chopped. Drop a teaspoon full at a time on a baking sheet, keeping the drops separated until all the sauce is used. Freeze until hard, remove with a spatula and store in a freezer zip lock bag.
This is pretty potent so use about one teaspoon at a time in 1/2 - 3/4 cup yogurt to make a delicious topping for veggies, Mexican dishes and soups. I have several recipes that call for chipotles, such as Electric Chili, which will appear in a later edition of the Bali Advertiser.
Indonesian Version
Sup Stok
Bahan - Bahan :
- 1 biji bawang bombay, dibagi 2 dan kupas dan buang kulitnya
- 2 daun pere ( leeks), di cuci bagus
- 2 buah wortel, dibagi 2
- 8-10 cabang daun seladri,
- 2 buah tomat
- 1 siung bawang putih, kupas dan buang kulitnya
- 2 kg. sayur campur, dicuci (bisa pakai buncis hijau, brokoli, sayur hijau, kol, zucchini, atau bisa coba dengan kombinasi sayur yang lain)
- 2 Tbl. tomato pasta, dari kaleng
- 2 daun bay leaf
- 3 Tbl. daun perseli
- 10 biji merica hitam
- 1/2 cangkir daun besil
- 5 liter air segar
- garam
Cara Membuat:
Masukkan semua bahan diatas di dalam pot sup dan direbus kira-kira 1 jam, sampai hancur. Kemudian dinginkan. Setelah dingin, di mes dan disaring.
Buang ampas sayur
Taruh sup stok di dalam berberapa kotak plastik (pakai kotak plastik yang ada tutupnya), simpan di freezer. Lebih baik isi 2 cangkir di dalam tiap kotak plastik, supaya lebih mudah dalam penyajian ( kalau perlu sedikit, bisa hanya dicairkan satu kotak saja).
Sup ini juga bisa disimpan dalam kotak es batu, simpan di freezer . Waktu sudah menjadi es batu, bisa dikeluarkan dan simpan di dalam tas zip dan simpan kembali di dalam freezer. Kalau disimpan dalam bentuk es batu, kita dapat ambil sedikit-demi sedikit sesuai keperluan.

Chipotles in Adobo
Buka satu kaleng Chipotles in Soas Adobo. Masukkan isinya kaleng dalam blender. Blender sampai halus.
Kemudian ambil saos dengan menggunakan sendok teh, isi penuh sendoknya dan taruh di piring, ambil lagi satu sendok dan taruh di piring, begitu seterusnya sampai saos dalam blender habis.
Setelah itu simpan dalam freezer. Waktu saos menjadi keras, pindahkan ke dalam tas zip dan simpan kembali dalam freezer.
Saos ini sangat pedas, jadi hanya dipakai 1 sendok teh saja untuk campuran soup, atau campur dengan 1/2 -3/4 cunkir yogurt untuk soas enak.
