Almond Flan

English Version:

This traditional dessert from Spain and Mexico is easy to prepare and impressive in taste. You can serve it by itself or with a dollop of slightly sweetened whipped cream for an over-the-top end to a special meal. I use castor sugar if I can find it rather than the normal Indonesian “gula pasir”. The castor sugar crystals are smaller and melt quicker and more uniformly.

Almond Flan

Serves 6-8

Preheat the oven to 350 degrees F.

Ingredients :

- 1 cup fine granulated sugar or castor sugar
- 1 2/3 cups sweetened condensed milk
- 3 eggs or 4 kampung eggs
- 3 egg yolks or 4 kampung egg yolks
- 1 tsp. vanilla extract
- 1 cup coarsely ground almonds
- Grated peel of one yellow lemon - the yellow part only

Directions :

Put the sugar into a 9 inch round metal cake pan and set this over a medium flame. Caramelize the sugar by stirring constantly until there are no lumps and the sugar has melted into a golden brown liquid. This requires constant attention because it is easy to burn or brown too quickly before all the lumps are melted. Set the pan aside to cool and for the caramel to harden - it may crack and this is fine.

Put the remaining ingredients into a blender or mix with a mixer until well blended. Pour this over the cooled caramelized sugar. Cover the pan with foil and set into a large shallow pan containing about 1 inch of hot water.

Bake at 350 degrees for 55 minutes or until a knife inserted comes out clean. Remove the pan from the water and cool on a wire rack. Loosen the edges with a knife. Put a serving plate upside down on top of the pan and quickly invert the flan into it. Choose a serving dish big enough to contain the now liquid caramel that will flow down the sides of the flan.

Note: Kampung eggs are the small eggs from free range chickens. I buy castor sugar at Dijon.

Indonesian Version:

Puding Almond
Untuk 6-8 orang

Panaskan oven 350 derajat F.


Bahan-bahan :

- 1 cangkir gula pasir halus, atau castor sugar

- 12/3 cangkir susu kental manis
- 3 butir telur biasa atau 4 butir telur kampung
- 3 kuning telur biasa atau 4 kuning telur kampung
- 1 tsp. vanili cair
- 1 cangkir tepung kacang almond
- 1 buah lemon, kulitnya di parut - yang kuning saja

Cara membuat :

Bikin caramel, caranya: masukkan gula pasir di dalam panci kue yang metal dan bentuk bundar. Panaskan, gunakan api medium. Aduk gula terus menerus sampai cairan gula menjadi halus dan berwarna coklat emas. Angkat dan sisihkan disamping supaya caramel menjadi dingin dan kasar. Kalau ada robek tidak apa-apa.

Masukkan susu, telur , kuning telur, vanili cair, tepung kacang almond dan lemon kedalam blender dan blender sampai semua tercampur bagus. Kalau tidak ada blender bisa pakai mixer. Kemudian taruh adonan ini di atas caramel yang sudah dingin. Tutup dengan aluminium foil dan taruh di dalam panci lebih besar tapi dangkal yang berisi air panas kira kira 2.5 cm .

Masukkan ke dalam oven. Oven selama 55 menit atau sampai matang. Untuk mengetes sudah matang atau belum, tusuk dengan pisau, kalau pisau bersih berarti sudah matang. Keluar semua panci dari oven dan simpan panci yang berisi adonan+caramel (puding) di atas rak metal sampai dingin. Pakai pisau untuk lepaskan pinggir puding dari panci.

Pilih piring meja yang lebih besar dari pada puding dan taruh terbalik di atas panci yang berisi puding. Kemudian balik panci yang berisi puding dengan cepat, sehingga puding yang sebelumnya dibawah, menjadi di atas.

Catatan :
Piring meja harus cukup besar supaya cairan caramel bisa cukup di piring.
