Baked Fish with Orange

English Version:

This Mediterranean fish dish is good enough for company and easy enough for a quick family meal. I like to buy the small red fish called “terebang” in the market. I have them cleaned but leave the heads and tails on for a more colorful presentation. You can do this with snapper or other fish fillets laying the dill on top of the fillets.

Baked Fish with Orange
Serves 4

Ingredients :

- A handfull of dill
- 4 whole fish (1 - 1.3 kg) such as terebang or mullet, descaled and cleaned
- 3 oranges, juice two of them and thinly slice the other into half rounds
- ½ lemon or 1 lime, juiced
- 2 Tbl. olive oil
- salt to taste
- 2 Tbl. pine nuts, roasted

Directions :

Two hours before eating, put the dill into the caviity of each fish. Put the fish into a baking dish. In a small bowl mix the orange and lemon juices, with the olive oil. Pour this mixture over the fish, turning to coat the fish. Let them marinate in the fridge.

Take the fish from the fridge about ½ hour before baking. Heat the oven to 350 degrees. Sprinkle the fish with salt and half of the sliced half rounds of the remaining orange. Bake for 20 minutes.

Take out of the oven and baste the fish with the juices in the bottom of the pan. Put the remaining orange slices over the fish and sprinkle with the roasted pine nuts. Return to the oven for another 10 minutes.

Garnish with dill sprigs.

Indonesian Version:

Ikan Oven dengan Orange


Untuk 4 orang

Bahan-bahan :

- segenggam daun dill
- 4 ekor ikan (berat 1-1.3 kg), pakai "ikan terbang", buang sisiknya dan cuci bersih.
- 3 jeruk orange (sunkist), 2 orange dijus dan 1 diiris tipis ½ bundar
- ½ jeruk lemon atau 1 jeruk nipis, dijus
- 2 Tbl. minyak olive

- garam secukupnya
- 2 Tbl. kacang pine, dipanggang


Cara Membuat:

Dua jam sebelum makan, taruh daun dill di dalam ikan (sisakan sedikit untuk hiasan). Taruh ikan didalam wadah kaca atau metal yang biasa dipakai untuk didalam oven. Dalam mangkok kecil, campur jus orange, jus lemon dan minyak olive. Aduk sampai semua tercampur dengan bagus. Kemudian taruh di atas ikan. Bolak balik ikanya supaya kedua sisi ikan rata kena jus. Simpan ikan di dalam kulkas.

Panaskan oven 350 derajat F. Setengah jam sebelum ikan dioven, lumuri dengan garam dan 1/2 orange yang sudah di iris. Oven ikan selama 20 menit. Keluarkan ikan dari oven, lumuri lagi dengan sisa irisan 1/2 orange. Pakai sendok untuk ambil jus yang ada di bawah ikan, taruh di atas ikan. Kemudian tambahkan kacang pine di atas ikan dan oven kembali selama 10 menit.

Sesudah matang bubuhi ikannya dengan daun dill.
