Twice Baked Potatoes

English Version:

This old standby never goes out of date or out of taste. You can double the recipe and reheat any leftovers a day or two later. If you use very small potatoes they can be served as finger food for appetizers.


Twice Baked Potatoes

Serves 5

Ingredients :
- 5 medium baking potatoes, scrubbed, skins left on
- 3 Tbl. yogurt
- 2 Tbl. melted butter
- 1 Tbl. parsley, finely chopped
- 1/4 cup chopped chives
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 Tbl. parmesan cheese coarsely grated


Directions :

Preheat the oven to 350 degrees F. Stab the potatoes with a knife and then bake in the oven for 50 minutes or until fully cooked. After 25 minutes turn the potatoes so they are evenly cooked.

Remove the potatoes from the oven and let them stand for 15 minutes. Then cut them in half length wise. Carefully scoop them out into a bowl leaving the skins intact with about 1 or 2 mm potato left inside so they keep their shape.

Mash the scooped out potato with a potato masher adding the yogurt, melted butter, parsley, chives, salt and pepper. The mashed potatoes should be light and fluffy with no lumps. You can add more yogurt or butter to your taste. When this is well mixed taste to correct the seasoning. You should have very tasty mashed potatoes.

Fill the potato shells with the mashed potato mixture mounding it up. Sprinkle the tops with the grated cheese. Bake in a 350 degree oven for about 20 minutes or until warmed through and lightly browned.

Indonesian Version:

Kentang Oven Dua Kali

Untuk 5 orang

Bahan - Bahan :

- 5 biji kentang ukuran sedang, dicuci tapi jangan dikupas kulitnya

- 3 Tbl yogurt
- 2 Tbl mentega, dicairkan
- 1 Tbl daun parsely, dipotong halus
- 1/4 cangkir daun bawang, dipotong sedang
- 1/4 tsp. garam
- 1/4 tsp. merica

- 1 Tbl keju parmesan, diparut besar

Cara Membuat :

Panaskan oven 350 derjat F. Oven kentang selama 50 menit. Setiap 25 menit, balik kentang untuk memasak sisi yang lain.

Keluarkan kentang dari oven, biarkan selama 15 menit. Kemudian bagi menjadi 2 bagian kearah memanjang. Keluarkan isi kentang dengan hati- hati agar kentang tidak retak/pecah saat mengeluarkan isinya.

Setelah semuannya dikeluarkan, lalu ditumbuk. Tambahkan yogurt, mentega, daun parsely, daun bawang, garam & merica secukupnya. Setelah semua tercampur rata, langsung masukkan adonan kedalam kulit kentang yang sudah dibelah. Di atas adonan ini taburkan keju parmesan yang sudah diparut. Oven kembali selama 20 menit sampai adonan diatasnya berwarna kecoklatan.
