Cream Cheese Brownies

English Version:

These sinful brownies are rich and moist and require considerable restraint not to over indulge. It is worth the effort and you will be proud of yourself if you manage to keep it to two pieces per sitting. If not, c’est la vie! You can bake another pan and try again. Practice makes perfect!

Makes 12-16 brownies depending on how you cut them


Cream Cheese Brownies

Ingredients:

- 120 gr. dark chocolate
- 5 Tbl. softened butter
- 80 gr. softened cream cheese
- 1 cup sugar
- 3 large eggs
- ½ cup plus 1 Tbl. wheat or oat flour
- 1 ½ vanilla
- 1 tsp. baking powder
- ¼ tsp. salt
- ¼ tsp. almond extract
- ½ walnuts, chopped


Directions:

Heat the oven to 350 degrees. Grease a 9x9 inch (22 x 22 cm) glass or metal baking pan.

In a double boiler melt the chocolate and 3 Tbl. butter. Set aside to cool.

With an electric mixer beat the remaining 2 Tbl. butter with the cream cheese and ¼ cup of sugar, one egg, 1 Tbl. flour, and ½ tsp. vanilla. Mix well so the mixture is smooth and free of lumps. Set aside.
In a large bowl beat the remaining 2 eggs with an electric mixer until they are thick and light in color. Slowly add the remaining sugar until the mixture is thick. Then add the baking powder, salt, ½ cup flour and mix well. Add the cooled chocolate mixture from the double boiler mixing well. Finally add the almond extract and the remaining vanilla and mix again. With a large spoon stir in the walnuts. Take one cup of this chocolate mixture out of the bowl and set aside.

Put the remaining chocolate mixture into the baking pan spreading it evenly to the edges of the pan. Put the cream cheese mixture on top of this and spread out evenly. Now put the remaining cup of chocolate mixture on top of the cream cheese. Carefully spread it out.

Take a spatula or knife and drag it through all three layers to make swirls being careful not to over do it or it will all be one color. When you cut into the brownies you want there to be distinct bands of the cream and chocolate

Put the brownies into the oven and bake 35-45 minutes until done. Test by inserting a toothpick. When it comes out clean they are done.

Note: To make a double boiler - find a metal or oven glass bowl that just fits inside of a pot making sure it can not fall into the pot. Put about 5 centimeters of water into the pot or so it is just below the bowl. The ingredients go into the bowl and are heated by the boiling water below.

Indonesian Version:

Brownies Keju Cream

12-16 brownies

Bahan-bahan :

- 120 gr. dark coklat
- 5 Tbl. mentega, lemas (yang belum cair)

- 80 gr. keju cream, lemas
- 1 cangkir gula pasir
- 3 butir telur coklat atau 4 butir telur kampung
- ½ cangkir + 1 Tbl. tepung terigu atau tepung oat
- 1 ½ tsp. panili cair

- 1 tsp. baking powder
- ¼ tsp. garam
- ¼ tsp almond cair (almond extract )

- ½ cangkir walnut, dipotong sedang

Cara Membuat :

Panaskan oven suhu 350 derajat F. Olesi cetakan metal atau gelas 9x9 inches (22cm x 22 cm) dengan mentega.

Cairkan coklat dan 3 Tbl. mentega dengan cara di "double boiler" dan dinginkan atau biarkan dulu disamping. Cara masak di "double boiler" bisa dilihat di catatan bawah ini.

Sisa yang mentega (2Tbl.) campur dengan keju cream. Campur kedua bahan dengan menggunakan mixer listrik. Setelah itu tambahkan ¼ cangkir gula pasir, masukkan gula sedikit demi sedikit. Kemudian tambah satu telur, 1 Tbl. tepung terigu atau oat, ½ tsp panili cair. Kocok dengan mixer sampai halus dan pasta (sampai yang keju cream tidak ada bola ), dan taruh disamping.

Dalam mangkok besar, kocok 2 butir telur dengan mixer - kocok sampai kental dan berwarna ringan. Tambah sedikit demi sedikit sisa gula sampai kental. Tambah baking powder, garam, ½ cangkir tepung. Aduk sampai semua tercampur rata . Tambahkan campuran coklat yang sudah di "doubel boiler", almond cair , sisa panili cair, campur bagus. Tambahkan walnut dan aduk pelan-pelan pakai sendok. Setelah tercampur rata sisihkan adonan ini 1 cangkir & taruh disamping.

Sekarang ambil cetakan yang sudah di olesi mentega dan taruh adonan coklat didalamnya. Bikin rata sampai ke sisi cetakan. Di atas adonan ini tambahkan adonan keju cream dan ratakan. Hati hati agar adonan keju tidak tercampur dengan adonan dibawahnya. Diatasnya taruh yang sisa 1 cangkir adonan, ratakan. Sekarang gores adonan sedikit saja agar adonan yang keju cream kelihatan di adonan coklat paling atas. Cara menggores adonan : Masukkan sendok karet atau pisau dalam adonan kira-kira 1cm, kemudian gores menyerupai huruf S. Lakukan lagi 2 kali disebelahnya. Jangan gores terlalu banyak, yang penting adonan yang putih bisa kelihatan di dalam yang coklat. Oven 35-45 menit sampai matang. Tusuk adonan dengan tusuk gigi dan angkat, kalau tusuk gigi bersih, berarti brownies sudah matang.

Catatan: Cara “Double Boiler”: masukkan coklat dan mentega dalam mangkok metal atau mangkok keramik. Kemudian taruh diatas pot yang berisi air. Ukuran mangkok harus sama atau lebih besar sedikit dengan garis tengah pot. Saat air di pot mendidih, uap airnya akan memanaskan mangkok metal.
