Sharda’s Lemon Dal Soup

We were invited to lunch at a friend’s house in Mumbai. We sat in the living room of their 5th floor apartment listening to the sounds of India filter in through the open windows - crows cawing, the fruit seller hawking his wares, taxis with their ever blaring horns. Sharda made this simple and delicious soup to refresh us from the pre monsoon sauna in which the city was encased. I find the addition of preserved lemons makes the soup even more delicious. *We just received the sad news that Sharda has passed away - she will be remembered with every spoonful of her soup.

Sharda’s Lemon Dal Soup

Serves 4

Ingredients:

- 1 cup kacang hijau, cleaned (also called mung dal -the yellow ones without the skin)
- 4 cups water
- 1 green chili, seeded and finely chopped
- 1/4 tsp. ground dried turmeric
- 1/4 tsp. asafetida
- 1 tsp. salt
- 1 tsp. sugar
- 1 Tbl. canola oil
- 1/2 tsp. cumin seeds
- 1/4 tsp asafetida
- 2 lemons, juiced
- 1/4 preserved lemon chopped (optional), see BA web site for recipe


Directions:

Cook the kacang hijau in 4 cups water until soft. Add the chili, ground dried turmeric, asafetida, salt, and sugar. Simmer for 10 minutes.

In a small frying pan heat the canola oil. When hot add the cumin and asafetida. Cook stirring until they become browned. Add this to the mung dal mixture along with the lemon juice. Stir well and add the chopped preserved lemons if you are using them.

Sharda’s soup can be eaten hot or slightly warm.

Indonesian Version:

Sup Kacang Hijau Dan Lemon

Untuk 4 orang

Bahan- bahan :

- 1 cangkir kacang hijau,yang sudah bersih tanpa kulit
- 4 cangkir air
- 1 biji cabe hijau, buang bijinya dan potong halus
- 1/4 tsp bubuk kunir
- 1/4 tsp bubuk asafoetida
- 1 tsp garam
- 1 tsp gula pasir

- 1 Tbl minyak canola
- 1/2 tsp jinten
- 1/4 tsp asafoetida
- 2 lemon yang besar, dijus

- 1/4 preserved lemon dipotong kecil (kalau ada) lihat resep di web. "Bali Advertizer".


Cara Membuat:

Masak kacang hijau di dalam air sampai matang, kemudian tambahkan cabe, bubuk kunir, asafoetida, garam, gula. Rebus selama 10 menit.

Dalam wajan kecil, masukkan minyak canola. Setelah panas masukan biji jinten dan asafoetida. Masak sampai berwarna kecoklatan. Masukkan campuran ini ke dalam kacang hijau, tambahkan jus lemon dan aduk. Kemudian tambah preserved lemon dan aduk sampai semua tercampur bagus.

Bisa langsung dimakan dalam keadaan panas atau biarkan disamping sampai panasnya berkurang (hangat) saja.
