Dimpled Knees Hart’s Potato Salad

English Version:

Sometimes we long for comfort food and this potato salad hits the spot. It was inspired by my Mother’s recipe and while it is different, it still brings back that sense of nurturing and caring she gave me. For variation I use whole baby potatoes and/or quail eggs instead of chicken eggs and chopped medium potatoes. The recipe lends itself well to doubling or tripling.

Dimpled Knees Hart’s Potato Salad

Serves 4

Ingredients for salad:

- 5-6 medium sized potatoes, boiled, skins removed, cut into chunks
or one bundle of baby potatoes, boiled, skins removed, left whole
- 3-4 hard boiled eggs, coarsely chopped. If using quail eggs leave them whole after peeling
- 1/4 cup chopped parsley
- 2 Tbl. seladri leaves, finely chopped (or substitute celery)
- 2 Tbl. chives or shallots, finely chopped
- 1 Tbl. capers, drained

Ingredients for Dressing:

- 1/2 cup yogurt
- 1/4 cup mayonnaise
- 1 tsp. salt
- freshly ground black pepper to taste
- 1/4 tsp. red Tabasco sauce

Directions:

In a large bowl mix the potatoes, eggs, parsley, seladri, chives, and capers.

In a small bowl mix the yogurt, mayonnaise, salt, pepper, and Tabasco.

When this dressing is well mixed pour it over the potato mixture and toss well until all the ingredients are coated in the dressing. Put into a serving bowl and top with a plate or cling warp. Put in the refrigerator for at least one hour or up to several hours.

Indonesian Version:

Salad Kentang dengan Saos Mayones


Untuk 4 orang

Bahan-Bahan :

- 5-6 biji kentang, direbus. Buang kulitnya dan potong bentuk kotak. Bisa juga pakai satu tas kentang yang kecil, jangan dipotong
- 3-4 telor direbus, buang kulitnya dan dipotong kotak
Bisa juga pakai telur puyuh, jangan dipotong
- 1/4 cangkir daun parsely, dipotong
- 2 Tbl. daun seladri, dipotang halus
- 2 Tbl. daun bawang, atau bisa pakai bawang merah, dipotong kecil
- 1 Tbl. biji caper

Bahan untuk Saos :

- 1/2 cangkir yogurt
- 1/4 cangkir mayones
- 1 tsp. garam
- merica secukupnya
- 1/4 tsp. tabasco merah


Cara Membuat :

Di dalam mangkok besar campur kentang, telor, daun parsley, daun seladri, daun bawang dan caper. Aduk sampai semua tercampur bagus.

Di dalam mangkok kecil campur yogurt, mayones, garam, merica, dan tobasco. Kalau sudah tercampur bagus, tambahkan saos ini di atas campuran kentang.

Aduk lagi sampai semua tercampur rata, kemudian simpan di kulkas.
