Mexican Vegetable Soup

This is an easy flavorful soup. It is especially delicious if you use homemade vegetable soup stock. Serve it with a green salad and corn bread for a satisfying meal. Recipes for both the soup stock and the corn bread are on the Bali Advertiser web site.

Mexican Vegetable Soup
Serves 4-6

Ingredients:

- 1 Tbl. olive oil
- 1 yellow onion, finely chopped
- 2 gloves of garlic, finely chopped
- 1 tsp. dried oregano
- 1/4 tsp. salt
- 2 carrots, scraped and sliced
- 200 gr. green beans, take off strings and cut into 3-4 cm lengths
- 2 tomatoes, skinned and chopped
- 6 cups soup stock, heated
- 3/4 cup cooked garbanzo beans or other cooked beans, rinsed
- 1 tsp. chipotle chili, or 2 green chilies, seeded and chopped
- 1 avocado, sliced
- coriander leaf for garnish, washed
- 2 limes, cut in quarters

Directions:

Heat the oil in a large pot. When it is hot add the chopped onions, garlic, oregano and salt. Cook until the onions are transparent and soft. Now add the carrots, green beans, tomatoes, the heated soup stock. Simmer this mixture for 20 minutes. Add the garbanzo or other beans and the chilies. Simmer another 5 minutes.

Put the soup either into individual bowls or a large soup tureen. Garnish with the sliced avocado and coriander leaf. Put the limes in a bowl on the table for each guest to squeeze into their soup.

For variation:
You can substitute pumpkin or spinach for the green beans. Pumpkin: cut 200 grams into 2 x2 cm pieces.
Spinach: you need about 2 cups of washed leaves

Indonesian Version:

Sup Sayur Mexican

Untuk 4-6 orang
Bahan - Bahan :

- 1 Tbl. minyak olive
- 1 bawang bombay, dipotong kecil
- 2 bawang putih, dipotong halus
- 1 tsp oregano
- 1/4 tsp garam

- 2 wortel, dipotong 1/2 cm bentuk bundar
- 200 gr buncis hijau, buang talinya, dipotong 3-4 cm
- 2 tomat, tanpa kulit dipotong 2 cm
- 6 cangkir sup-stock, heated

- 3/4 cangkir buncis garbanzo atau buncis merah, disaring dan buang airnya
- 1 tsp chipotle atau 2 cabe, dipotong dan buang bijinya

- 1 apokat, diiris
- daun ketumbar, dipotong - untuk hiasan

- 2 buah jeruk nipis ( dipotong menjadi 4 bagian)

Cara Membuat:

Panaskan minyak di pot besar. Waktu minyak panas, tambahkan bawang bombay, bawang putih, oregano dan garam. Masak sampai bawang bombay lemas dan transparan. Tambahkan wortel, buncis, tomat, sup stock yang sudah dipanaskan, masak selama 20 menit. Tambahkan garbanzo dan chipotle atau cabe, dan masak selama 5 menit.

Taruh sup didalam mangkok kecil untuk tiap orang atau satu mangkok besar dan diatasnya taruh apokat dan daun ketumbar.

Taruh jeruk nipis di samping sup, pakai wadah yang kecil, supaya tiap orang bisa tambah jeruk ke supnya sesuai keinginan.

Variasi :
Sebagai ganti buncis hijau, bisa pakai labu (potong 2 cm) atau 2 cangkir daun bayam yang belum dimasak.
