Fresh Mushroom Soup

English Version:

I have been making variations of this soup for more than 30 years and have never tired of it. You can vary the flavor by using sherry wine or dry vermouth and by using a mixture of mushrooms such as button, shitake and/or Portobello. A good substitute for cooking sherry is the Javanese “Saos Tape Siau Hing” which can be purchased in most large supermarkets here, where it is usually found in the section with the various kecaps.

Fresh Mushroom Soup

Serves 3-4

Ingredients:

- 1 Tbl. butter
- 1 Tbl. olive oil
- 1 yellow onion, finely chopped
- 2 clove garlic, finely chopped
- 1/2 tsp. dried thyme
- 1/2 tsp. dried sage
- 1/2 kg. button mushrooms, washed and thinly sliced
- 3 Tbl. tomato paste - thinned in a cup with a little hot water
- 3 cups vegetable stock
- 2 Tbl. saos tape or dry vermouth
- 1 1/2 tsp. salt
- pepper to taste
- 2 Tbl. parsley, finely chopped
- a pinch of cayenne
- 2 1/2 Tbl. finely grated parmesan cheese

Directions:

Heat the butter and olive oil in a medium sized pot. Add the chopped onion and garlic and fry until they just turn golden brown. Then add the thyme and sage and cook stirring for another minute.

Add the sliced mushrooms and cook stirring for 5 minutes. Add the tomato paste mixture and the vegetable stock, stirring well. Add the wine, salt and pepper, parsley, and cayenne and simmer for another 10 minutes.

Garnish each steaming bowl with the grated Parmesan cheese. Serve.

Indonesian Version:

SUP JAMUR
Untuk 3-4 Orang


Bahan- bahan:

- 1 Tbl. mentega
- 1 Tbl. minyak olive
- 1 bawang bombay, dipotong kecil
- 2 biji bawang putih, potong kecil
- 1/2 tsp daun thyme kering
- 1/2 tsp daun sage kering

- 1/2 kg. jamur, dicuci bersih dan di iris tipis
- 3 Tbl. pasta tomat
- 3 cangkir sup stock
- 2 Tbl. saos tape or dry vermouth
- 1 1/2 tsp. garam
- merica secukupnya
- 2 Tbl. daun parsley, dipotong halus
- 1 jari cabe kering

- 2 1/2 Tbl. keju parmesan, diparut kasar


Cara Membuat :

Di dalam pot panaskan mentega dan minyak. Goreng bawang bombay dan bawang putih sampai berwarna sedikit coklat. Kemudian tambahkan daun thyme dan daun sage. Masak selama 1 menit.

Tambahkan jamur, aduk selama 5 menit. Tambahkan pasta tomat (campur pasta ini dengan sedikit air panas supaya sedikit lebih cair ). Aduk sampai semua tercampur bagus. Setelah itu, tambahkan sup stock, saos tape, garam, merica, daun parsley, dan cabe kering. Masak selama 10 menit.

Enak dimakan dalam keadaan panas. Di atasnya taburi dengan keju parmesan.
