This simple, easy to make dish, has been in my repertoire for at least 10 years. It is Indian in origin but I serve it with almost anything. I like to buy a beautiful perfectly formed small orange pumpkin to keep as a decoration on my side board and after some time has passed, we sacrifice it to this dish. Yum!
Pumpkin with Onion, Cumin and Tomato
Serves 4
Ingredients:
- 1 Tbl. canola oil
- 1/2 tsp. cumin seeds
- 1/2 yellow onion, thinly sliced
- 1 tomato, skin removed, chopped
- 350 gr. fresh pumpkin, seeds removed, pumpkin chopped into 3 cm squares
- 1/4 cup water
- 2 Tbl. coriander leaf, chopped
- a pinch of cayenne
- 1/3 Tbl. lime juice
- 1 tsp. salt
- 1/8 tsp. freshly ground black pepper
Directions:
Heat the oil in a frying pan large enough to hold the pumpkin, add the cumin seeds and onions and cook stirring for 2 minutes. Cover the pan and lower the flame.
Now add the tomato, pumpkin, and water. Stir well. Cover and cook until the pumpkin is tender.
Add the coriander, cayenne, lime juice, salt and pepper. Mix and cook for one minute.
- 1 buah tomat, buang kulitnya dan dipotong
- 350 gr. labu,yang sudah bersih tanpa kulit, dan dipotong kotak 3 cm
- 1/4 cangkir air
- 2 Tbl. daun ketumbar, dipotong
- 1 jari bubuk cabe
- 1/3 Tbl. jus jeruk nipis
- 1 tsp. garam
- 1/8 tsp. merica hitam
Cara Membuat:
Panaskan minyak di dalam wajan, tambahkan biji jinten, bawang bombay, masak selama 2 menit. Tutup dan kecilkan api.
Setelah itu, tambahkan tomat, labu, aduk dan tambah air, sampai semua tercampur rata. Tutup lagi dan rebus dengan api yang kecil sampai labu matang.
Tambahkan daun ketumbar, bubuk cabe, jus jeruk nipis, garam dan merica. Masak lagi 1 menit. Siap untuk dihidangkan.
