Pumpkin Muffins

Some years ago I cut back on wheat but still wanted baked goods. We found that by making oat flour the base and adding other flours we could still have a variety of breads and muffins that are more interesting than those with only wheat flour. To make the oat flour, put rolled oats in an electric coffee or spice grinder and grind to a fine powder. In a pinch we have used the blender and sifted out the larger chunks to blend again. If you prefer to use wheat flour just substitute it for all of the other flours in the recipe. Or get creative and mix it with one or two others being careful not to add too much rice flour or the muffins will get gummy.

Pumpkin Muffins

Makes 9 Muffins


Ingredients :

- 1 3/4 cup mixed flours (1 cup of oat the remainder a mix of spelt, buckwheat, and a small amount of rice flour)
- 1/2 cup white sugar
- 1 cup rolled oats, left whole
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. nutmeg
- 1/4 tsp. ground cloves
- 3/4 tsp. ground cinnamon
- 1/4 tsp. salt
- 1/2 cup milk or soy milk
- 1/4 cup canola oil
- 2 Tbl. brown sugar
- 2 eggs
- 3/4 cup pureed cooked pumpkin
- 1 1/2 Tbl. brown sugar
- Optional: 1/2 block (about 125 g) cream cheese
Directions:

Heat the oven to 400F degrees. Butter or oil a 9 hole muffin tin.

In a large bowl mix the flours, sugar, oats, baking powder, baking soda, nutmeg, cloves, cinnamon, salt.

In a smaller bowl mix the milk, oil, brown sugar, and eggs. When this is well mixed add the pumpkin puree and again mix well. Pour this mixture into the flour mixture in the large bowl. Stir with a spoon until just mixed (don’t over stir or the muffins will be tough).

Drop the batter into the buttered muffin tins. If you are using the cream cheese put a teaspoon full on the top of each muffin and push down into the middle of the batter. Sprinkle the top with brown sugar. Bake for 20 minutes or until a tooth pick inserted in the middle of a muffin comes out clean. Let the muffins cool for 10 minutes before removing from the pan.

Variations (you can use any or all):
- 1 cup chopped walnuts
- 1 cup chopped dates
- 1 Tbl. grated orange peel

Maffin Labu

Untuk membuat 9 Maffin

Bahan - Bahan :

- 1 3/4 cangkir tepung campur (1 cangkir oat, sisanya dari spelt, bakwit, atau beras tapi hanya sedikit tepung beras supaya maffin didak terlalu lengket)
- 1/2 cangkir gula pasir
- 1 cangkir rolled oat, biarkan utuh.
- 1 1/2 tsp. baking powder
- 1 tsp. soda kue
- 1/4 tsp. bubuk pala
- 1/4 tsp. bubuk cengkeh
- 3/4 tsp. bubuk kayu manis
- 1/4 tsp. garam

- 1/2 cangkir susu biasa atau bisa juga menggunakan susu kedelai
- 1/4 cangkir minyak canola
- 2 Tbl. gula coklat
- 2 butir telur
- 3/4 cangkir labu,dimasak atau direbus dan dihaluskan/diblender

- Boleh pakai: 125 gr keju krim ( kalau ada, diisi ditengah-tengahnya )
- 1 1/2 Tbl. gula coklat

Cara Membuat :

Panaskan oven dengan suhu 400 derajat F. Sambil menunggu oven panas, olesi cetakan muffins dengan minyak atau mentega.

Ambil mangkok besar, campur semua tepung, gula, oat, baking powder, soda kue, bubuk pala, bubuk cengkeh, bubuk kayu manis, dan garam. Campur sampai rata.

Di dalam mangkok kecil, campur susu, minyak canola, gula coklat, dan telur. Aduk sampai semua tercampur bagus. Tambah labu dan kembali aduk sampai semua tercampur rata.

Masukkan adonan yang ada dalam mangkok kecil ke dalam mangkok besar/adonan tepung. Kemudian aduk sampai adonan tercampur rata (jangan diaduk terlalu lama karena kalau diaduk terlalu lama, maffin akan menjadi keras). Setelah adonan tercampur, masukkan adonan ke dalam cetakan. Kalau mau pakai keju krim, taruh 1 tsp. di atas tiap maffin dan dorong sampai keju masuk di tengah adonan. Bubuhi dengan gula coklat di atas tiap maffin. Taruh di dalam oven selama 20 menit, kemudian tes dengan tusuk gigi (tusuk adonan dengan tusuk gigi, apabila masih lengket berarti adonan belum matang. Oven lagi beberapa menit dan tes lagi dengan tusuk gigi).

Keluarkan dari oven dan dinginkan selama 10 menit. Kemudian keluarkan muffin dari cetakan.

Variasi :
Untuk variasi, bisa pakai satu, dua, atau semua bahan dibawah ini:
- 1 cangkir walnut, di potong
- 1 cangkir date, dipotong
- 1 Tbl. kulit jeruk(sunkis), yang bagian kuningnya saja
