Makes a liter of Chili Infused Vodkap

Tis’ the season to be jolly and this drink will jolly up you and your guests! Warning: it is not for the faint of stomach. This is a chili lovers libation. I use a dried habanero chili that I bring from the States. Habaneros are one of the most fiery Mexican chilies but also impart a slight smoky flavor. You can use fresh red local chilies just as well - the hotter the better.

Makes a liter of Chili Infused Vodka

Chili Tinis

- 1 liter bottle vodka
- 1 ripe fresh pineapple, skinned and coarsely chopped saving all the juices
- 2 to 4 fresh small whole hot red chilies (or 1 whole dried habanero chili)

A week before you want to serve the drink, fill a large wide mouthed jar with the pineapple and its juices and vodka. Wash the chilies and add whole to the vodka. Close the jar tightly and put in a dark place to “infuse”. I use a rubber ringed jar. Save the vodka bottle for later use.

After a week take out the chilies and strain the vodka pressing the pineapple with the back of a spoon. If it is cloudy I strain again with a paper coffee filter. Using a funnel pour this back into the original vodka bottle. If it is still a bit cloudy just let it sit undisturbed for a day and the cloudy part will settle to the bottom of the bottle. Chill before using.
For each drink :

- 1 shot of fresh lime juice, chilled
- 1 shot of simple syrup, chilled
- 2 shots of chili vodka infusion, chilled

Pour the lime juice, simple syrup and chili infusion into a cocktail shaker filled with ice, shake until well chilled and pour into a glass. You can garnish with one of the suggestions below:

- Lombok chilies - make a lengthwise cross cut leaving the stem intact so the chili curls out. Remove the seeds.
- Sprigs of coriander leaf.
- Wedges of fresh pineapple (not the ones used for infusing because all their flavor is now in the vodka).

Note: To make simple syrup boil equal parts of white sugar and water until the sugar dissolves. It will keep a long time in the fridge.

A shot equals 3 Tablespoons

Chili Tinis


Untuk bikin chili Tini, pertama kita harus bikin chili vodka dahulu. Bikin chili vodka 1 minggu sebelum mau minum chili Tini. Untuk bikin 1 liter chili vodka, bahan sebagai berikut.

Bahan-bahan untuk Chili Vodka :

- 1 liter vodka
- 1 nanas segar dan manis, buang kulitnya dan dipotong sedang - Waktu potong akan keluar cairan/jus , simpan cairan/jus ini.
- 2 to 4 cabe merah yang paling pedas

Cara Membuat Chili Vodka :

Masukkan nanas (beserta jusnya) dan vodka kedalam botol besar. Cuci cabe sampai bersih, masukkan kedalam vodka dan nanas. Pakai botol dengan tutup dan karet.

Sesudah satu minggu, buang cabenya dan saring cairan. Tekan nanas dengan sendok supaya semua vodka keluar. Kalau masih ada ampas, saring lagi dengan kertas penyaring kopi.

Masukkan cairan yang sudah disaring ke botol vodka. Dinginkan sebelum di pakai.


Bahan-bahan Chili Tini, untuk sekali minum :

- 3 Tbl. jus jeruk nipis, dingin
- 3 Tbl. sirup gula, dingin (lihat catatan dibawah cara bikin sirup gula)
- 6 Tbl. chili vodka, dingin

Cara Membuat Chili Tini :

Masukkan jus jeruk nipis, sirup gula, dan chili vodka di dalam botol pengocok untuk cocktail dengan es batu. Kocok keras dan tuangkan kedalam gelas.



Bisa dibubuhi dengan:

- Lombok- Untuk hiasan, potong lombok menjadi 4 bagian, potong dari ujungnya (jangan dipotong sampai habis, sisakan sedikit dipangkalnya). Buang batunya, dan tarik ujung cabe, sehingga akan melengkung membentuk seperti bunga.

- Daun ketumbar.

- Potongan nanas (jangan pakai nanas yang didalam vodka, karena rasanya sudah hilang.

Catatan: Untuk bikin syrup gula - rebus gula pasir dan air (perbandingan 1:1) sampai gula mencair. Simpan di kulkas. Bisa disimpan lama.
