Back up in Amed with Victoria at the always lovely Bali Beach house, I set about to make jams for an arriving wedding party. It had been a long time since I made jam but with Vic’s tutelage we did come up with this tasty spreadable with what we had on hand. Once back in my kitchen I worked out the recipe. While delicious right out of the pot it seems to get better with age. Put one jar in the fridge for immediate use and freeze the other two.
Banana Jam with Cloves
Makes about 3 Cups
Ingredients:
- 1 1/2 cups guava juice from a carton – 100% juice is the best
- 1 Tbl. ginger, grated
- 3 Tbl. palm sugar, grated
- 6 cloves
- 4-5 ripe bananas, chopped
- A grating of white pepper or a pinch of ground cayenne
- 1/4 tsp. vanilla extract
Directions:
Put the juice, ginger, and palm sugar in a heavy bottomed pot or frying pan and boil together for five minutes. Add the cloves and bananas and cook stirring occasionally until the bananas fall apart. You may need to add some water to keep it from sticking. Just before you are ready to take it from the fire give it a light grating of white pepper or a pinch of cayenne and the vanilla extract
You can vary this by changing the flavor of the juice. You can also add cardamom or cinnamon. Experiment!
Put in jars and keep one in the fridge and the rest in the freezer.
Selai Pisang dengan Cengkeh
Kira kira 3 cangkir
Bahan-bahan :
- 1 1/2 cangkir jus jambubiji (pakai guavana juice kotak yang 100%, bisa dibeli di supermarket )
- 1 Tbl. jahe,diparut
- 3 Tbl. gula merah, diparut
- 6 biji cengkeh
- 4-5 pisang yang masak, dipotong kecil
- 1/16 tsp.(1/4 jari) bubuk merica putih atau bubuk cabe kering
- 1/4 tsp. vanilli cair
Cara Membuat :
Masukkan jus jambu biji, jahe, dan gula merah di dalam wajan atau panci. Rebus selama 5 menit.
Tambahkan cengkeh dan pisang, masak pisang sampai menjadi seperti bubur. Sekali-sekali diaduk supaya adonan pisang tidak gosong. Kalau adonan kering, tambahkan sedikit air. Waktu adonan sudah hampir selesai, tambahkan sedikit merica putih atau satu jari kecil bubuk cabe kering dan vanilli cair.
Taruh di dalam beberapa botol dan simpan satu di dalam kulkas dan yang lain di dalam freezer.
