Crepes are a versatile wrap for any meal whether it is blintzes for breakfast, a wrap for lunch, or my favorite crepe cake for dinner. This is the sweet version and delicious wrapped around a favorite fruit preserve and topped with a dollop of plain yogurt for breakfast. Put ice cream or fruit inside and sauce with chocolate for dessert. The crepes can be made a day ahead of serving and stored in the fridge, or wrapped tightly in foil and frozen for later use. We will use this recipe in the next issue of the BA for a breakfast treat.
Basic Sweetened Crepes
About 10 crepes
Ingredients :
- 3 large or 4 small eggs
- 1 cup low fat milk (you can also use regular milk)
- 1/2 cup water
- 1/2 tsp. salt
- 1 cup white flour
- 1 Tbl. butter, melted and cooled
- 1 Tbl. sugar
- 2 Tbl. fresh orange juice
- butter for frying
Directions :
Put the eggs, milk, water and salt into a blender. Blend until smooth. Add the flour, cooled melted butter, palm sugar, and the orange juice. Blend until smooth. Now set this aside for two hours.
When you are ready to cook the crepes, heat a frying pan the same size as the crepe you want to make. I use a 24 cm diameter pan. Add a pat of butter and rotate the pan so the butter covers the bottom.
Put 1/4 cup of the batter into the pan and immediately rotate the pan again so the batter covers the bottom in a thin even layer with no holes. Cook until set and flip the crepe over and cook for one more minute on this other side. If you develop a hole in the crepe use a tiny bit of batter to fill it in and cook until set.
Lay the crepe flat on a plate off to the side and cook another crepe in the same manner until all the crepes are cooked.
You can wrap the cooled stack in foil or plastic wrap and keep over night in the fridge or freeze for a couple of weeks.
Basic Crepes
Untuk 10 crepes Bahan-Bahan :
- 3 butir telur besar atau 4 telor ayam kampung
- 1 cangkir susu low fat (bisa pakai susu yang biasa)
- 1/2 cangkir air
- 1/2 tsp. garam
Masukkan telur, susu, air dan garam ke dalam blender. Blender sampai semua bahan tercampur bagus.
Tambahkan tepung terigu, mentega, gula pasir dan jus orange. Blender lagi sampai semua tercampur bagus. Angkat dan taruh disamping selama 2 jam.
Panaskan wajan, tambah mentega, kemudian taruh 1/4 cangkir adonan, goyangkan wajan, bikin seperti kue dadar, yang tipis dan rata. Masak sampai tidak ada adonan yang cair, balik untuk masak sisi yang lain. Taruh disamping.
Kalau saat memasak ada dadar yang berlobang/robek, tambahkan sedikit adonan lagi untuk memperbaiki/menambal, sehingga tidak ada dadar yang robek.
Ambil 1/4 cangkir adonan lagi, lakukan hal seperti diatas, sampai semua adonan habis.
Sesudah semua dingin bisa bungkus dengan plastik atau aliminium foil dan simpan di dalam kulkas untuk satu hari atau bisa disimpan di freezer untuk dua minggu.
