Ginger Beet Soup

The color of this soup is magical and ginger gives it a special kick. A swirl of sour cream or yogurt on top is a must. You can serve this easy to make soup hot, warm or chilled.

Ginger Beet Soup
Serves 4

Ingredients:

- 3 Tbl. butter
- 1 yellow onion, chopped
- ¾ Tbl. ginger, grated or finely chopped
- ½ kg. beets, skinned and diced
- 1 potato, diced
- 2 1/2 cups vegetable stock, you can substitute water but the taste will not be as deep
- 1 - 2 tsp. salt
- 1/4 tsp. pepper
- 1-2 tsp. lime juice
- 4 Tbl. yogurt or sour cream

Directions:

Heat the butter in a pot. When it is hot add the chopped onion and cook stirring until it is soft. Then add the ginger, beets, and the potato. Stir and add the stock. Cook for one hour. The potatoes and beets should be very soft. Set aside to cool a little.

When cooled whirl in a blender or food processor until it is pureed. Add salt and pepper to taste and the lime juice and blend until well mixed.

You can return the soup to the pot to reheat, leave it out to serve slightly warm, or put in the fridge to chill.

When ready to serve top each serving with 1 Tbl. yogurt or sour cream.

Sup Obe Bit dan Jahe

Untuk 4 orang

Bahan bahan :

- 3 Tbl. mentega
- 1 bawang  bombay, dipotong kecil bentuk kotak

- 3/4Tbl. jahe, dipotong kecil atau diparut
- 1/2kg. beet, buang kulitnya and dipotong kecil
- 1 kentang, dipotong kecil
- 2 1/2 cangkir stok, kalau tidak ada stok bisa pakai air

- 1-2 tsp. garam
- 1/4 tsp merica
- 1-2 tsp. jus jeruk nipis

- 4 Tbl. yogurt atau sour cream

 

Caranya:

Panaskan mentega dalam wajan.  Setelah panas masukkan bawang bombay, masak sampai lemas. Kemudian masukkan jahe, beet dan kentang. Aduk sebentar dan masukkan stock. Masak selama 1 jam. Simpan disamping dan dinginkan sedikit.

Setelah cukup dingin masukkan kedalam blender. Blender sampai halus. Tambahkan garam dan merica dan jus jeruk nipis. Blender lagi sebentar. Cicipi sedikit, mungkin kurang garam dan jus jeruk nipis. Kalau kurang tambahkan.

Bisa makan sup ini panas, sedikit panas, atau dingin dari kulkas.

Siapkan 4 mangkok, masukkan bit yang sudah diblender kedalam setiap mangkok. Tambahkan 1 Tbl. yogurt atau sour cream diatasnya. Siap dihidangkan.
