This refreshing East Mediterranean salad has the zing of sumac, a salty, sour, tangy Moroccan spice. It makes use of stale bread but I often just use what I have on hand. Sumac can be purchased at Dijon.
Fattoush
Serves 4
Salad Ingredients:
- 4 slices of stale dense bread, toasted and torn into bite sized pieces
- 1 head of rucola leaves, washed and torn into about 5 x 5 cm pieces
- 1 bell pepper, any color, roasted and skinned, cut into 1x1 cm pieces
- 1 small cucumber, skinned and diced
- 4 small tomatoes (not baby), quartered
- 3-4 chives or 2 shallots, minced
- 1 one head of parsley, finely chopped
- 2 Tbl. corriander leaves, finely chopped
- 3 Tbl. mint leaves, finely chopped
- 125 gr of feta cheese, crumbled
- 1 Tbl. ground sumac (reserve some for garnish)
Ingredients for Dressing:
- 1-2 limes, juiced
- 3 Tbl. olive oil
- 2 cloves garlic, pressed
- 1/4 tsp. salt
- pepper to taste
Directions for Dressing:
Combine the lime juice, olive oil. garlic, salt and pepper in a jar with a tight fitting lid and shake well. Set aside.
Directions for the Salad:
Put the bread pieces, rucola, bell pepper, cucumber, tomatoes, chives, parsley, mint, and feta into a bowl and mix well. Sprinkle in the sumac reserving some for garnish and toss again. Half hour before eating toss with the dressing and set aside.
When ready to serve toss again, put into a serving bowl, and sprinkle the top with the remaining sumac.
Fattoush (Roti dan Rukola Salad)
Untuk 4 orang Bahan-Bahan :
- 4 potong roti yang keras (putih atau coklat). Panggang roti sampai garing, kemudian remas dengan tangan, supaya menjadi kecil-kecil.
- 1 kepala rukola, dicuci bersih dan potong dengan tangan, ukuran 5x5cm
- 1 paprika yang sudah masak, potong 1x1 cm
- 1 biji ketimun kecil, buang kulit dan dipotong kecil
- 4 biji tomat kecil, dipotong menjadi 4 bagian
- 3-4 batang daun bawang atau 2 biji bawang merah, dipotong kecil
- 1 kepal daun parsely segar, dipotong halus
- 2 Tbl. daun ketumbar, dipotong halus
- 3 Tbl. daun mint, dipotong halus
- 125 gr. potong keju feta, dipotong kecil
- 1 Tbl sumac
Bahan untuk Saos:
- 1-2 buah jeruk nipis
- 3 Tbl. minyak olive
- 2 bawang putih dipress
- 1/4 tsp. garam
- merica secukupnya
Campur semua bahan untuk saos, aduk sampai semua tercampur bagus.
Cara Membuat :
Campur roti, rukola, paprika, ketimun, tomat, daun bawang, parsley,daun ketumbar,daun mint, dan keju feta di dalam mangkok, aduk sampai semua tercampur bagus.
Setengah jam sebelum makan, tambahkan saos, supaya saosnya meresap. Taruh di dalam mangkok meja dan hiasi atasnya dengan sumac.
