These rich and flaky bars can be varied by the flavor of the jam used in the filling. My favorite is apricot. We use oat flour that we make by whirling rolled oats in an electric coffee mill but wheat flour can be easily substituted. These bars will keep for several days in a tightly closed container if you can keep them away from your family!
Golden Jam Bars
Makes about 16 pieces
Ingredients :
- 1 cup brown sugar, pressed into the cup to measure
- 1 cup of softened butter, not melted
- 1 large egg or two kampung eggs
- 1 tsp. vanilla extract
- 1 3/4 cup wheat or oat flour or a mixture of half each
- 1 cup walnuts, coarsely chopped
- 1/2 cup apricot jam
Directions:
Heat the oven to 350 degrees F. Grease with butter, a square baking pan either glass or metal about 20 cm x 20 cm.
Put the brown sugar, softened butter, egg and vanilla into a mixing bowl. Using an electric mixer, mix until it is well blended and it becomes a soft and fluffy dough.
Using a large mixing spoon, add the flour and mix until well blended. Add the walnuts and mix with the spoon until the walnuts are evenly distributed throughout the dough.
Put half the dough into the baking pan and press evenly into the bottom of it. Put the jam on top of this and spread it evenly with a knife being careful not to disturb the dough in the bottom of the pan. Put the remaining half of the dough on top of the jam spreading and pressing down evenly.
Bake in the oven for 50 minutes or until done. Testing with a toothpick inserted in the middle of the pan. When the toothpick comes out clean the bars are done.
Cool and cut into squares or bars.

Bahan bahan:
- 1 cangkir gula coklat, (brown sugar) ditekan bagus - jangan pakai gula merah
- 1 cangkir mentega lemas, (tidak cair)
- 1 telur coklat dan besar atau 2 telur kampung
- 1 tsp. vanili cair
- 1 3/4 cangkir tepung terigu atau campuran oat dan terigu
- 1 cangkir walnut, dipotong sedang
- 1/2 cangkir selai apricot, atau bisa pakai selai yang lain
Cara Membuat:
Panaskan oven 350 derajat F. Olesi dengan mentega, cetakan segiempat yang dari kaca atau metal yang ukurannya kira-kira 20 cm x 20 cm.
Masukkan gula coklat, mentega, telur dan vanili dalam mangkok. Kemudian pakai mixer listrik sampai semua tercampur bagus dan lemas/halus. Tambahkan tepung, aduk bagus pakai sendok karet. Setelah itu, tambahkan walnut. Aduk lagi sampai adonan tercampur bagus.
Taruh 1/2 adonan diatas cetakan dan ratakan. Tambahkan selai diatasnya, ratakan. Yang terakhir, tambahkan sisa 1/2 adonan di atas selai, ratakan.
Masukkan kedalam oven. Oven selama 50 menit sampai matang. Untuk melihat apakah sudah matang atau belum gunakan tusuk gigi. Tusuk adonan dengan tusuk gigi, kalau tidak lengket berarti sudah matang.
Keluarkan adonan dari oven, dinginkan dan potong ukuran 2.5 x 5 cm.
