Green Beans with Tahini

These uncommon common green beans are an unusual mix of flavors and easy to put together when you desire more then just a steamed veggie with butter.  Tahini, or sesame butter, can be found in most supermarkets or specialty stores. The recipe can be easily halved, however leftovers are tasty if gently heated. 

Green Beans with Tahini
                 
Serves 8
Ingredients :

- 1 kg. green string beans

- 6 Tbl. canola oil
- 2 tsp. black mustard seeds
- 10 cloves of garlic, finely chopped
- 2 cm piece of ginger, finely chopped
- 3 Tbl. tahini
- 4 Tbl. coriander leaf or parsley
- 1/8 tsp. ground black pepper
- 1/16 tsp. cayenne
- 1 Tbl. lime juice
- salt to taste
Directions :

Wash the beans well and take off the strings, from both sides if necessary. Cut them into 3 cm. lengths.  Cook them in boiling salted water for 5 minutes, then drain and rinse under cold water to retain their color and stop the cooking process.

Heat the oil in a frying pan. When hot add the mustard seeds and stir until they begin to “pop!”.  Quickly add the garlic and stir fry until the garlic is golden brown. Now add the ginger and keep stirring until the ginger gives off a nice aroma.  Add the drained beans, tahini, coriander or parsley, black pepper, cayenne, lime juice and salt to taste.  Stir until well mixed and put on a serving plate.

Buncis Hijau dengan Tahini

Untuk 8 orang
                                                                              
Bahan-Bahan :

- 1 kg. buncis hijau
- garam secukupnya
- 6 Tbl. minyak canola
- 2 tsp. biji mustard yang hitam
- 10 biji bawang putih, dipotong kecil sekali
- jahe, dipotong kira-kira 2 cm
- 3 Tbl. tahini
- 4 Tbl. daun ketumbar/parsely
- 1/8 tsp. merica
- 1/16 tsp. bubuk cabe kering
- 1 Tbl. jus jeruk nipis
- garam secukupnya

Cara Membuat :

Cuci buncis sampai bersih dan buang talinya yang ada di kedua sisinya. Potong dengan panjang 3 cm. Rebus dalam air panas dengan garam. Masak selama 5 menit.  Saring buncis dan rendam dalam air dingin.

Panaskan minyak dalam wajan. Setelah panas, masukkan biji mustard, aduk sampai biji mustard ada suara "POP" setelah itu cepat tambahkan bawang putih, aduk sampai berwarna kecoklatan. Tambahkan jahe, aduk lagi dengan cepat. Tambahkan buncis (tanpa air), tahini, daun ketumbar, merica, bubuk cabe kering, jus jeruk nipis dan garam secukupnya. Aduk sebentar kemudian angkat dan taruh di atas piring yang bagus, siap dihidangkan.
