Mango Couscous with Pine Nuts  

Perfectly ripe mango, herbs and spices turn this North African grain into a jamboree of flavors - a little sweet, a little savory, and packed with flavor. Serve it with your favorite cheese and bread for lunch or with fish or chicken for a more substantial meal. 

                     Mango Couscous with Pine Nuts        
                                                                                                                                                                                                                                                                                                                                                              Serves 4

Ingredients:

- 2 cups soup stock or water
- 1 cup couscous
- salt and pepper to taste

- 1 Tbl. olive oil
- 1 ripe mango, skinned and seeded, cut in to 1 x 1cm pieces
- 1 green chili, seeded and finely chopped
- 1 tomato, finely chopped
- 1/2 cups raisins
- 1 tsp. Indian curry powder
- 1 lime, juiced
- 1/4 cup pine nuts, roasted (reserve one tsp. pine nuts for garnish)
- 1/4 cup fresh mint leaves, coarsely chopped
- 1/4 cup coriander leaves, coarsely chopped

- a handful of rucola leaves (optional)

Directions:

Bring the stock or water to boil in a pot. Add the couscous, salt and pepper and stir.  Cover the pot and cook 15-20 minutes or until the couscous has absorbed the liquid.  Fluff with a fork to let the steam out and set aside to cool.

In a frying pan heat the olive oil. Add the mango cubes and chili and cook stirring for one minute.  Add the tomatoes, raisins, curry powder, lime juice, pine nuts reserving about a teaspoonful for garnish. Stir this mixture well. Lower the heat.  Now add cooked couscous, most of the mint and coriander leaves, reserving a few of each for garnish.

When well mixed put into a serving bowl and garnish with the reserved pine nuts, mint, and coriander leaves.  This can be eaten warm or at room temperature. It can also be turned out onto a bed of torn rucola leaves.

Mangga & Couscous
                                                                           

 Untuk 4 orang

Bahan-Bahan:

- 2 cangkir stock sayur atau air
- 1 cangkir couscous
- garam & merica secukupnya

- 1 Tbl. minyak olive
- 1 buah mangga, yang matang, buang kulit & bijinya, dipotong 1x1cm
- 1 biji cabe hijau, buang bijinya & dipotong kecil
- 1 buah tomat, dipotong kecil
- 1/2 cangkir raisin
- 1 tsp. bubuk kare indian
- 1 buah jeruk nipis, dijus
- 1/4 cangkir pine nut, yang sudah dipanggang
- 1/4 cangkir daun mint, dipotong sedang
- 1/4 cangkir daun ketumbar, dipotong sedang

 

Cara Membuat:

Dalam pot, rebus stock atau air, kemudian tambah couscous, garam dan merica. Aduk sampai semua tercampur bagus. Tutup pot, masak selama 15-20 menit sampai airnya kering/habis. Saat memasak aduk pelan-pelan secara vertikal (aduk keatas), pakai garpu atau sendok supaya tidak ada bola. Biarkan disamping.

Masukkan minyak olive dalam wajan yang besar, pakai api yang besar, setelah panas tambahkan mangga & cabe. Masak selama 1 menit.
Kemudian tambahkan couscous yang sudah masak, kecilkan api. Masukkan tomat, raisin, bubuk kare indian, jus jeruk nipis, pine nut (sisakan sedikit untuk hiasan), aduk sampai semua tercampur bagus. Tamba daun mint dan ketumbar (sisakan sedikit untuk hiasan). Taruh dalam mangkok yang bagus, kemudian bubuhi dengan sedikit daun mint, daun ketumbar dan sedikit pine nut. Siap dihidangkan.
