Mexican Refried Beans

English Version:

I love Mexican food but with the tax on imported foods so high these days, I no longer buy canned refried beans for Tostadas and Heuvos Rancheros. I save my rupiahs so I can buy corn tortillas instead! I recently became a member of the Slow Food movement and while I will probably never be a purist I will be relying more on local ingredients when possible. These beans might not be authentic Mexican but they are very tasty.

Mexican Refried Beans
Serves 4-5

Ingredients:

- 1 Tbl. olive oil
- 1 yellow onion, finely chopped
- 3 cloves garlic, finely chopped
- 1/2 roasted green bell pepper, finely chopped
- 1 tsp. ground cumin
- 1 tsp. dried oregano, crushed
- 1-2 tsp. Mexican chili powder
- 2 1/2 cup fresh red beans, cooked until soft, or canned kidney beans, rinsed and drained
- 1/2 cup vegetable stock, or water
- 3 Tbl. coriander leaf, coarsely chopped
- salt and pepper to taste
- Tobasco to taste
- Grated cheese such as feta, cheddar or ememtaller - optional
Directions:

Heat the oil in a frying pan. When it is hot add the chopped onion, garlic, and bell pepper. Cook stirring from time to time for about four minutes. Set the flame to medium and add the cumin, oregano, and the Mexican chili powder, stirring well and cook one or two minutes longer. Add the cooked beans, the vegetable stock, coriander leaf, salt, pepper, and Tobasco to taste. Cook 5-10 minutes, adding water if the beans start to stick. The beans should be thick and not watery.

Put half the beans in a bowl. Using a potato masher, mash this half of the beans and return them to the pot, mixing well. You can also use a food processor instead of the masher and process until pureed. Re heat the combined beans checking the seasoning. These should be very flavorful.

Sprinkle with the grated cheese and serve.

Note: I buy the fresh red beans at Tiara Dewata in Denpasar.

Refries Beans


Untuk 4-5 orang

Bahan-bahan :

- 1 Tbl. minyak olive
- 1 bawang bombay, dipotong kecil
- 3 biji bawang putih, dipotong kecil sekali
- 1/2 biji paprika hijau yang sudah dipanggang, dipotong kecil sekali

- 1 tsp. bubuk jinten
- 1 tsp. oregano kering
- 1-2 tsp. bubuk chili mexican
- 2 1/2 cangkir buncis merah segar, yang sudah dimasak atau bisa juga dipakai buncis merah kaleng yang sudah disaring dan dibilas
- 1/2 cangkir sup stock atau air
- 3 Tbl. daun ketumbar, dipotong sedang
- garam & merica secukupnya
- saos tobasco secukupnya

- keju, di parut. Bisa pakai keju feta, cheddar, atau ememthaller kalau ada


Cara Membuat :

Panaskan minyak diwajan. Setelah panas, masukkan bawang bombay, bawang putih, dan paprika, masak selama 4 menit. Sekali sekali diaduk, gunakan api medium. Kemudian tambahkan bubuk jinten, oregano, bubuk chili mexican, aduk dan masak selama 1- 2 menit. Tambahkan buncis, stok, daun ketumbar, garam, merica, dan tobasco. Masak selama 5-10 menit. Masakan jangan terlalu cair.

Ambil setengah buncis, kemudian dimes ( gunakan alat mes yang biasa digunakan untuk mes kentang ). Bisa pakai blender besar kalau mau sebagai ganti alat mes. Masukkan kembali buncis yang sudah dimes ke pot yang berisi buncis yang tidak dimes. Panaskan dan periksa bumbunya.

Bubuhi dengan keju.
