Rice and Feta Cakes

We used to make these cakes with millet but now that imports are difficult to get we substitute it with rice. Browned to perfection, these cakes are just as yummy. Try them with white, brown, or red rice - all equally delicious. It’s a great use for leftover rice, chopped and plumped in hot water. You can vary the topping but my favorite is “Savory Tomato Sauce” on the BA website.
         
Rice and Feta Cakes
                                                                                          Serves 4

Ingredients:

- 3 tsp. olive oil
- 1 clove garlic, minced
- 2 shallots minced
- ½ red bell pepper, finely chopped

- 2 cups of cooked rice
- 1½ Tbl. parsley leaves, chopped
- 100 gr. feta cheese, crumbled
- salt and pepper to taste

Directions :

Heat 1 tsp. olive oil in a frying pan. Add the minced garlic and shallots, stir. Add the bell pepper and cook stirring for 3 minutes or until soft. Set this aside.

If you use left over rice, chop it up with a knife. Put it in a pot with ½ cup water and heat it until it is soft again and the water has evaporated. If you cook rice just for this recipe then you can skip this step.

Put the rice in a bowl. Add the garlic, shallot and bell pepper mixture along with the parsley, feta, and salt and pepper to taste. Mix well until all the ingredients are evenly incorporated.

Heat a frying pan with 1 tsp. oil (you may need more) over a low flame. Wet your hands and take about 1/8 of the rice mixture and form it into ball in your hands. Flatten the ball so the cake is 1 cm thick. Add it to the frying pan. Do the same with the rest of the rice mixture. Only cook one layer of cakes at a time, not crowding, adding more oil as necessary. Cook each side for about 5 minutes or until it is brown and crispy on the outside.

 

Serve topped with “Savory Tomato Sauce”.

Nasi dengan Feta Cake

Untuk 4 orang

Bahan-bahan :

- 3 tsp. minyak olive
- 1 biji bawang putih, dipotong halus
- 2 biji bawang merah, dipotong halus
- ½ buah paprika, dipotong kecil

- 2 cangkir nasi
- 1½ Tbl. daun parsley, dipotong
- 100 gr. keju feta dipotong kecil
- garam dan merica secukupnya

Cara Membuat:

Panaskan 1 tsp. minyak dalam wajan, masukkan bawang putih, bawang merah, dan paprika, masak selama 3 menit sampai lemas. Taruh disamping. 

Masukkan nasi dalam mangkok.

Bisa dipakai nasi yang segar atau nasi yang kemarin (yang disimpan di kulkas).

Kalau pakai nasi yang kemarin, potong-potong nasi sampai ukuran sedikit kecil, tambah 1/2 cangkir air, kemudian rebus. Masak sampai nasi menjadi lemas dan airnya habis.

Kemudian tambahkan bawang merah, bawang putih dan parika yang sudah digoreng, daun parsely, keju feta, garam, merica,. Aduk sampai semua tercampur bagus.

Ambil wajan, masukkan 1 tsp. minyak, masak dengan api kecil. Setelah panas, basahkan tangan, ambil 1/8 nasi yang sudah tercampur bumbu, putar dengan kedua tangan supaya berbentuk bola, kemudian ditekan-tekan supaya agak pipih (tebal kira-kira 1 cm). Masukkan dalam wajan, dan buat sama dengan sisa nasi sehingga ada 8 biji. Masak selama 5 menit, bolak-balik sampai kedua sisi berwarna coklat.  Jangan menaruh/menggoreng adonan nasi  terlalu banyak di dalam wajan dalam waktu yang bersamaan. Tambahkan minyak kalau perlu.

Taburi “Savory Tomato Sauce” di atas tiap cake nasi dan makan.
