Sesame Mushroom

The sauce on these mushrooms is so good I consider using it on other vegetables but can’t seem to get past this recipe because the results are so tasty. There is something about the way the mushrooms give way to my teeth crunching down on them that I find very satisfying.

Sesame Mushroom
Serves 3 - 4

Ingredients:

- 1/2 yellow onion, chopped
- 3 cloves garlic, minced
- 1 thick slice ginger, minced
- 2 Tbl. water

- 2 Tbl. canola oil
- 1 1/2 Tbl. tomato sauce
- 2 tsp. ground coriander seed
- 1/2 tsp. ground cumin
- 1/4 tsp. salt
- pepper to taste
- 1 pinch cayenne

-16 fresh mushrooms, cleaned, stems removed
- 1/2 Tbl. lime juice
- 1/3 cup of water

- 1/2 Tbl. sesame seeds, toasted

Directions:

Into a blender or food processor put the chopped onion, garlic, ginger, and 2 Tbl.water. Blend until a smooth paste forms.  You can also use a mortar and pestle to turn the ingredients into a paste.

Choose a lidded frying pan big enough to hold the mushrooms in one layer. Add the oil and heat over a medium heat.  When the oil is hot add the contents of the blender and fry, stirring continually, for 8-10 minutes or until the paste has browned.

Turn the heat down and add the tomato sauce, ground coriander, cumin, salt, and pepper, and cayenne and fry for one more minute. Now add the mushrooms, lime juice, and 1/3 cup of water for about 15 minutes or until the mushrooms are just done.

Put the mushrooms on a serving dish and sprinkle with the toasted sesame seeds. Serve hot or at lukewarm.

Jamur dengan Biji Wijen

Untuk 3-4 orang

Bahan-bahan :

- 1/2 bawang bombay, dipotong
- 3 biji bawang putih, dipotong kecil
- 1 irisan jahe, dipotong kecil
- 2 Tbl. air yang sudah direbus

- 2 Tbl. minyak canola
- 1 1/2 Tbl. saos tomat
- 2 tsp. bubuk ketumbar
- 1/2 tsp. bubuk jinten
- 1/4 tsp. garam
- merica secukupnya
- 1 jari bubuk cabe kering, sedikit

- 16 biji jamur segar, bersihkan dan buang dongkoknya
- 1/2 Tbl. jus jeruk nipis
- 1/3 cangkir air

- 1/2 Tbl. biji wijen, yang sudah dipanggang

Cara Membuat :

Masukkan bawang bombay, bawang putih, jahe, dan 2 Tbl. air kedalam blender besar. Blender sampai semua tercampur bagus dan pasta (halus). Bisa pakai ulekan kalau tidak ada blender.

Panaskan minyak dalam wajan, gunakan api sedang. Setelah panas, masukkan pasta dari blender, aduk dan goreng 8-10 menit sampai berwarna emas kecoklatan.

Kemudian kecilkan api, tambahkan saos tomat dan bubuk ketumbar, bubuk jinten, garam, merica dan bubuk cabe kering. Goreng selama 1 menit.

Kemudian tambahkan jamur, jus jeruk nipis dan 1/3 cangkir air. Jika masakan sudah mendidih, tutup wajan dan kecilkan api. Masak kurang lebih 15 menit.

Setelah masak taruh di dalam piring yang bagus dan bubuhi dengan biji wijen di atasnya.
