Wing Bean and Tomatoes

In a recent BA article Cat Wheeler sang the virtues of wing beans. I found them at Tiara Dewata supermarket in Denpasar and thought I’d give them a try.  They’re not only pretty on the plate with their delicate star shape but delicious too.  Cat advised me that the younger and smaller the bean the more they taste like asparagus but these bigger ones were excellent in their own right. And as she wrote in her article, they are full of protein.

Wing Bean and Tomatoes
Serves 4
Ingredients:

- 3 cups wing beans, cleaned and thinly sliced
- 1Tbl. canola oil
- 3 shallots, thinly sliced
- 3 cloves garlic, pressed
- 1 green chili, seeded and finely chopped
- 1 large tomato, skinned and chopped
- 1 Tbl. fresh basil leaves, chopped coarsely or torn by  hand
- salt and pepper to taste

Directions:

Cook the sliced wing beans in boiling water for three minutes and then drain.
Heat the oil in a small frying pan and when hot add the shallots and the garlic and sauté’ stirring for five minutes.  Add the chili and tomatoes and cook stirring for two more minutes. Now add the cooked wing beans, basil leaves,  salt and pepper and stir well.  Take from the fire and put on a serving plate.

This dish is best eaten warm or hot.

Kecipir dengan Tomat

Untuk 4 orang

 

Bahan-bahan :

- 3 cangkir kecipir, bersihkan dan diiris tipis
- 1Tbl. minyak canola
- 3 biji bawang merah, didiris tipis
- 3 biji bawang putih, dipres
- 1 biji cabe hijau, buang bijinya dan dipotong halus
- 1 biji tomat besar, buang kulitnya dan dipotong sedang
- 1 Tbl. daun besil, dipotong sedang
- garam dan merica secukupnya

Cara Membuat :

Rebus kecipir setengah matang kira-kira 3 menit, angkat dan tiriskan.

Dalam wajan, panaskan minyak canola. Setelah panas, tambahkan bawang merah dan bawang putih, masak selama 5 menit. Tambahkan cabe hijau dan tomat, masak selama 2 menit. Tambahkan kecipir, daun besil, garam dan merica, aduk sampai semua tercampur bagus. Angkat dan taruh diatas piring yang bagus. Siap dihidangkan

Catatan : lebih enak dimakan dalam keadaan masih panas.
