The Anchovy Lover’s Sauce

Working on my computer in Amed, I looked up to see Mt. Agung shoot out a white plume of steam. Mesmerized, I watched the volcano for the rest of the day. When I needed a break, I went to the kitchen to cook, inspired by the mountain’s energy. I came up with a salad dressing, sauce, and dip all in one. It’s chock full of anchovies, lemon, garlic and olive oil and so yum I was eating it with a spoon. The rest I poured over steamed asparagus. We dipped toasted baguette into the remaining sauce, letting the oil drip down our fingers.


Makes about 1/3 cup





– 2 Tbl. chopped and mashed canned anchovies

– 1 ½ tsp. lemon zest

– 2 Tbl. lemon juice

– 1 large clove of garlic, pressed or grated

– a pinch of cayenne

– 4 Tbl. extra virgin olive oil

– a few grindings of black pepper



To mash the anchovies put the fillets in a small bowl and chop them with a sharp knife. Then take a fork and mash to a course paste.


Add the lemon zest, lemon juice, pressed or grated garlic and a pinch of cayenne. Mash this all together until well incorporated. Slowly add the olive oil while whisking with a fork. Let this sit for at least 30 minutes before serving to let the flavors meld together.


The sauce keeps well in the fridge for a week to 10 days. Put it on everything – eggs, salad, veggies, potatoes, or bread. I’d probably skip ice cream though….

Saos Ikan Teri Untuk Orang Yang Suka Ikan Teri


Untuk kira kira 1/3 cangkir

Bahan Bahan:

– 2 Tbl. ikan teri dari kaleng, di cincang dan dihaluskan

– 1 ½ tsp. kulit jeruk lemon diparut halus

– 2 Tbl. jus jeruk lemon

– 1 siung besar bawang putih, ditekan atau diparut

– 1 jari bubuk cabe kering

– 4 Tbl. minyak zaitun (olive oil)

– 1 jari bubuk merica hitam segar


Cara Membuat:

Masukkan ikan teri dalam mangkok, cincang dengan cara: potong potong dengan pisau tajam, kemudian gunakan garpu dan ditekan sampai pasta kasar.

Tambahkan kulit jeruk lemon, jus jeruk lemon, bawang putih, dan satu jari bubuk cabe kering. Ditekan semua ini bersama sampai rata. Tambahkan minyak zaitun sedikit demi sedikit sambil terus ditekan sampai semua bahan tercampur rata. Waktu rata, biar di samping paling tidak 30 menit supaya bumbu meresap bagus.

Saos ini bisa simpan di kulkas selama 7-10 hari. Coba dengan telur, salad, sayur, kentang, atau roti. Enak sekali!
