Fantastic Salad

Remember that spiced pear recipe from the BA back in October? If you did them they should be perfect by now. And the recipe in the last issue for the spiced nuts? Combine them and you have a different and delicious salad. The vinegar in the spiced pears compliments the olive oil to perfection.

Fantastic Salad
Serves 2 – 3

Ingredients:

– 1 cup asparagus or green beans, steamed but still crisp, cut into 3 cm lengths
– 1/4 cup dried cranberries or other dried fruit
– 1/2 cup spiced pears, chopped (see the recipe at: http://www.baliadvertiser.biz/articles/food_glorious/2014/spiced_pickled.html
– 1/2 cup cherry tomatoes, cut in half
– 3 Tbl. olive oil
– sea salt and freshly ground pepper to taste
– 3 cups of salad greens including ruccola, torn by hand
– 1/3 cup spiced cashews, (see BA Food Glorious Food Dec 24th edition)
– 1/3 cup crumbled feta cheese

Directions:

Put the asparagus or green beans into a salad bowl. Add the cranberries, spiced pears and the tomato halves along with the olive oil, salt and pepper. Toss this gently. You can set this aside for a few hours in the fridge if you aren’t serving it right away.

When you are ready to serve add the salad greens, spiced cashews and the feta cheese and toss gently and serve on a decorative plate.

Fantastis Salad
Untuk 2-3 orang

Bahan Bahan :

– 1 cangkir asparagus atau buncis hijau ,dimasak setengah matang dan dipotong dengan panjang 3cm
– 1/4 cangkir cranberries yang kering, atau bisa pakai buah buahan yang lain, pakai buah kering
– 1/2 cangkir spiced pears (buah pir dengan bumbu), di potong sedang (resep ini bisa dilihat di Bali Advertiser:http://www.bali advertiser.biz/articles/ food_glorious/2014/spiced_pickled.html

– 1/2 cangkir tomat kecil, dipotong menjadi 2 bagian
– 3 Tbl. minyak olive
– garam laut dan bubuk merica yang segar secukupnya
– 3 cangkir daun salad dan daun rukola, dirobek dengan tangan
– 1/3 cangkir kacang mente dengan bumbu (lihat resep ini di Bali Advertiser ; Food Glorious Food Dec 24th.)
– 1/3 cangkir keju feta, di hancurkan

Cara Membuat:

Di dalam mangkok besar, masukkan asparagus atau buncis hijau, cranberries, spiced pears, tomat kecil, minyak olive, garam dan merica. Aduk pelan pelan, sampai semua bahan tercampur bagus. Bisa disimpan dalam kulkas.

Beberapa saat sebelum makan, tambahkan daun salad, kacang mente, dan keju feta. Aduk pelan pelan sampai semua bahan tercampur rata. Taruh di atas piring bagus, siap dihidangkan.
